Beef Jerky Made In The Oven - Dry Rub vs Marinade

  • It’s time to make some more Beef Jerky, using the oven this time to see which I prefer--jerky flavored with a marinade, or jerky seasoned with a dry rub.
    Hot & Sweet Rub Ingredients
    1 TBSP Brown Sugar
    1 TBSP Cane Sugar
    1 TBSP Ground Black Pepper
    1 tsp Kosher Salt
    1 tsp Granulated Garlic
    1 tsp Red Pepper Flakes
    Honey Soy Marinade Ingredients
    ¼ cup Honey
    ½ cup Soy Sauce
    2 TBSP Apple Cider Vinegar
    2 TBSP Crushed Ginger

    Excellent video! Thank you! Personally, I leave all the marinade on, because all the water will eventually evaporate out of the marinade and leave all the flavor on the jerky! If you soak it up with a paper towel you just end up with less marinade flavor on the jerky.

    I really like your videos. They’re about cooking and not self promotion of your brand. There are a lot of guys on RUclips that seem more about self promotion and promoting products than they are about cooking. I liked this video as it shows how to utilize an oven and not just a smoker.

    Off topic: Electric Smoker. Went through a dozen different RUclips videos/reviews, including your older ones, and finally decided to add a Char-broil electric smoker to my Weber Kettle out door kitchen. Hope I'm as happy as you are 12 years from now! Besides, it was the only way I was going to get through the holidays with 6 adults and 2 grandchildren to feed for three weeks!!

    I love making beef jerky. I do a combination of marinade and dry rub. After I get all of the beef jerky on my dehydrator trays, I sprinkle extra seasoning on the beef. It turns out amazing every time.

    I absolutely love doing dry rubs and thought maybe I was crazy but all my friends and family say the same thing. Wow…..so much flavor! For me it’s the only way to go and you don’t have to wait 24hrs to cook. 4-6hrs later and you’re enjoying your Jerky!

    Great Video Ry! I bet some Korean kalbi marinade would be excellent for jerky! LOL, the most creative way I've seen jerky made is using a cheap Walmart box fan and a few HVAC filters!

      I might try that someday, but 160-170 is a pretty low temp to maintain on the kettle for a long time :)

    Cool comparison Ry! I do jerky quite a lot but honestly I marinate mine much more than dry. I'll try that out again. And it is very easy in the oven.

    What do you mean it should last up 2 five days. I'm lucky if beef jerky last 1 day. That's how much I love beef jerky. Would have to make a ton to last 5 days. Always love your videos.

    Have you used a dehydrator? I'm curious of your opinion if that or oven turn out better.

      I have. I actually prefer the electric smoker, then the oven, then the dehydrator. Dehydrators tend to take longer and I don't like my jerky that dry anyway :)

    nice job with the video and the content of the video from an instructional point of view. I make lots of jerky but I always use marinades. What can you tell me about trying to judge what percentage of dry rub do I need for for meat? I tend to make 20-30 pounds when I make any of my flavors of jerky. I am afraid of over seasoning. Can you make any suggestions?

      I really can’t for that amount. I usually do 5 pounds or less. And I just coat it by look.

    Thai jerky is the best. They make jerky. But before es its served they deep dry it.

      I prefer them a little thicker than most. Usually a little less than 1/4 inch.

    I've been some people ..hang their beef jerky using toothpicks.. does it make a difference laying them flat oppose to hanging them?

    Could one fasten the process by cooking on a bbq, then into oven for final dehydrate?

      If you can keep the heat lower it would be okay on the BBQ.

    Hey Ry! I’ve been trying to make jerky and let it marinade for 24 hours before smoking. I find that it comes out with little to no flavor after smoking it. Any insight on how to fix this? I use allegros original marinade

      I've never had that issue after 24 hours. I would try adding your own flavors to the marinade to pump that up. I've also marinated for 48 hours before so you could give that a go.

    I think the dry rub would be better. The regular wet rub is too salty for me.

      I don't make it for preservation so I don't use curing salt.

    Is there a way to make the jerky if you dont have the baking sheets or cooling racks? Ive been dying to try these recipes but i dont have the pans XD

      Some people just lay the pieces on the oven rack and put foil on an oven rack beneath that to catch any dripping.

      Lay a piece of tinfoil on the bottom rack. Skewer your beef slices on tooth picks and balance them on the top rack with the strips hanging down. That's how I do it. Works really well.
