    Step by step preparation:
    Biscuit:
    -2 eggs + 2 yolks;
    -100 g of sugar;
    -1 pack of vanillin;
    -2 pinches of salt;
    -80 g flour;

    Beat eggs with yolks with sugar, vanilla and salt until stiff peaks.
    Sift the flour several times and with a spoon slowly pour into the beaten eggs at the lowest speed of the mixer.

    200 ml milk
    200 ml cream
    2 packs of agar
    1.5 tbsp cornstarch
    2 tbsp sugar
    5-6 tbsp cocoa
    2 pinches of salt
    If there is no Ritter Sport, then Rum, or Rum essence + nuts and soft raisins.
    Whip the cream and place in the refrigerator.
    Separate the whites from the yolks.
    In a saucepan, boil milk, yolks, cocoa and cornstarch with 1.s.l of sugar, a pinch of salt until thick sour cream.
    Soak agar for half an hour.
    Put a saucepan with a thick bottom on the fire and pour 100 g of sugar into the Agar and on a moderate
    fire to bring the syrup to 100 degrees.
    Start whipping the whites at 100 degrees syrup with 1 tbsp of sugar and 1 pinch of salt.
    At 108 degrees, pour the syrup in a thin stream into the whites whipped to peaks.
    Continue to work with a mixer until the temperature of the whipped proteins drops to 50 degrees.
    Reduce mixer speed to minimum.
    Pour the cocoa and cream mixture into the beaten egg whites one by one.
    Mix everything and pour on a biscuit.
    Place the cake in the refrigerator overnight.
