- Rosina has the energy of someone 30 years younger! 'Taccu con lo zí' is a pasta soup from the Grottomare region of Marche. It's important to use good quality guanciale or pancetta for this simple dish:
250g 00 flour, 2 eggs, pinch of salt dissolved in 25ml of water.
2 tablespoons of olive oil, 1 onion diced, and 300g cubed guanciale.
There's no way that woman is over 100 years old. She's got more energy than me and I'm 38. Does she have a magic portrait in the attic?! Amazing

A person can live carefully, eat only "healthy" foods and exercise daily but good genes are 98% of living a long time. Pick your ancestors carefully !!! lol
Not important how long but the quality of life when you get old , keep eating unhealthy and processed food with no exercise and at 50 you'd be older than Rosina at 101

Nonna Rosina reminds me of my Mamma Stella, who passed away in May, at 97 years of age. Oh how I wish I could make ravioli with Mamma one more time! Making them without her is not the same, but I’m teaching my niece, because that’s how culture lives on. My love to Rosina e tutta famiglia! ❤️🥰

The tears of the old always bring "me" to tears as well. She has lived a life of sacrifice, holding on to care for a beloved daughter. So glad for her that her extended family show her such care and affection. They're all so lucky to have one another. The most terrible thing for me in getting older is not my own aches and pains or visits to doctors, but losing that older generation. I miss them every day, my nonni and parents and zii.

Wow, what a delicious dish. This lady is so inspiring. She does not even use a noodle machine and just improvises with the dough by not giving it any time to rest and it still works out perfectly. This dish is actually somehow similar to a carbonara variation from a chef I just watched recently. He was also using a broth instead of the more creamy version in the classic recipe.
Just to appreciate more this beautiful video from my region le Marche : The translation when she was asked if she remember when she made it for the first time “ no , my mother had to have an operation so she went to Ripa Hospital “ should have been like this : Yes , my mother had to undergo to a surgery so she went to la Ripa ( local slang for a beautiful nearby hill town called Ripatransone ).
At the time ( around 1930 ) the hospitals where not located in the coasts that where considered unhealthy but on higher sites as Ripatransone .
The “no” she said in this case has the opposite meaning , is a connecting word we Italian say often without real meaning 😊

from our sweet Rosina , and I’d say that at the time she was 12 yo the nearest important hospital in the area was in Ripatransone , there are many reasons why the main hospitals where not on the coast : health : malaria , history : main cities of the area where all inland : Ascoli , Fermo , Macerata , Camerino , it all changed in the first decades after WWII with the demographic boom of the coastal cities , today the nearest public Hospital for Grottammare is in San Benedetto del Tronto and together their beaches are famous as “La riviera delle palme “ one of the main tourist places in the Adriatic coast.
As for malaria it was a big concern for a millenium for all the coasts of Italy and was eradicated in the years 1945-1960 by using the now forbidden DDT .

This is my favorite Pasta Grannies episode. Who wouldn't love how funny and snarky Rosina is. I wish I had some Italian in me and that she were my Auntie too (can't give up my actual Grannies).
fresh vegetables grown at home, meats obviously produced/cured locally, active lifestyle - GOSH - I'm racking my brain, here, trying to suss out what might be contributing to her healthy old age. Willing to bet the flour is locally milled as well.
The factors contributing to an active old age are various, as you say. Rosina lives in a house divided into apartments were the rest of her family lives, so that is another factor - she is surrounded by loved ones. 🙂🌺 best wishes, Vicky

Taccu is generally made from a blend of various flours. This is why she specifically mentions the "ONLY" ingredients she uses.
Taccu should NOT be confused or simply equated with tagliatelle because Taccu is cut into a variety of shapes.
Some cooks cut it like tagliatelle, others may shape it into recchiatelle (similar to orecchiette), but more times than not, it will be shaped like a parallelogram or a trapezoid.
It is a very "ancient" pasta originally made from blending various types of flour, especially those of very hard grains.
However, after corn found its way to the boot, polenta blended with wheat flour became an extremely popular combination to make taccu
