Double helpings of pasta: sweet and savoury - and both delicious!

- Maria shared two pasta recipes. The first is served only on Ascension Day in May in the Cilento region: here, the tagliolini are simmered in sugared sheep's milk. For the second, Maria uses a bean special to the area called fagioli di Controne, which are served with cavatelli (which Maria calls gnocchetti), garlic and dried peppers called peperoni cruschi, which are fried and then crumbled into the dish. The beans are savoury and digestible thanks to their thin skins.

My grandmother had her own pasta board and rolling pin that only she used. I remember sitting close by to watch. I can still see her rolling pasta and can hear the pattern of the dough flipping with each turn of the dough. She spent most of her childhood in the Calabria area of Italy. Everything she made was 5 star quality. I wish as a child I appreciated her meals more. I remember saying “(homemade) ravioli again?”. “Italian food again?” Every Wednesday and Sunday pasta, and every Friday was pizza and or pasta fagioli. Stuffed artichokes during Lent. And homemade pizzelles and struffoili at Christmas. My mother cooks all of these things now for my kids. Before I know it my turn to do this for my grandchildren will be here. In honor of this, I am making stuffed artichokes for dinner tomorrow (Saturday) and tonight I made Friday night pizza (pesto and cheese).
Man I haven't had stuffed artichokes for at least 25 years😥I remember eating them at my nonnas house! She came to America from Calabria, I still have family there! I know the traditions are precious, dont loose them, I'm sure you will be doing it for your grandkids one day ❤😁

Yours is one of my favourite posts ever . My little boy had pasta e zucchini tonight. I need to up my pasta game though. Stuffed Artichokes . Like M&G commented . Wow but it's been a while. I need to have a go. I think I will remember . I am pasta Jedi the force is strong and once I start I know I can do stuffed artichokes come faceva nona. Excellent post Mary .
Ok, so yesterday, I watched a couple of episodes and I absolutely had to make my own pasta for the first time in my life. I had some type 00 flower, free-range eggs, good olive oil. No pasta machine, so I had to roll the dough myself and, although time-consuming, it was totally worth it. I made tagliatelle and the simplest tomato & basil sauce, topped it with some grana padano. Such a delicious dinner!

Ho rivisto questo episodio per la seconda volta e di nuovo mi sono scese le lacrime agli occhi perché mi ricorda tanto la mia nonna che purtroppo non c'è più. E il mio tanto amato Cilento splende più che mai. Quanti bei ricordi. Riesco ancora a sentire l'odore dell'aria che c'è lì. È una cosa che non si può descrivere.

I loved watching her, all the love Italians put into their cooking! I loved how she determined to still make the pasta even though her arthritis sent her to the hospital. We have the same sweet pasta dish in Cyprus! It's called galotri and the cinamon is optional. We don't eat it as a main dish but rather as something extra and sweet. Thank you for reminding me of the recipe!

Mmmm lovely, Pasta e fagioli is one of my all time great comfort dishes. Best served after a day out in the cold, rain battering the windows & a huge bowl of it served with homemade bread. Heaven.
I haven't had sweet pasta in a long time, growing up in the 70's it was relatively common to have it baked like a rice pudding.
Maria looks like my great aunt, she was a prolific baker. If you turned up at her house she'd scurry off to the kitchen & seemingly by magic reappear a short while later with mountains of fresh baked goods. Her drop scones have never been bettered. Served still warm with lashings of butter & homemade raspberry jam.

This is the beauty of traveling around Italy. You always discover new things, always new dishes from area to area, from city to city (also for us Italians it is always a new discovery). Unfortunately, people around the world often only know the “standard” dishes.

Do you mean Costante Imports on Bell St, Preston? Can't think of huge Italian store in Coburg, only Mediterranean Wholesalers further down in Brunswick.

There are lots - in fact I think I will go to Costante's for the pasta maker and the Mediterranean Wholesalers for the ingredients. By the way, have you discovered the Pasta Grammar youtube channel? it's totally awesome with authentic Italian cooking and techniques with Eva (Italian and a brilliant cook) who's married to Harper (he's American) The first thing I'm gonna try to make is Eva's Fetuccine al Alfredo..!

Gervasi Foodworks on Sydney Rd in Coburg is another good little supermarket with lots of imported Italian goodies. Also has an excellent deli and in-house butcher with the best Italian style pork sausages.
I was brought up with a pastry board...so old! Didn't have work tops in my younger days so everything was done on the table with a board to protect it like these ladies.. .lovely looking dishes as usual but as I am in a confessing mood, I have to admit to hating all pulses and, wait for it...cheese!!😁😁😁😁 Won't stop me watching though as it is my favourite channel
Sounds like the daughter lives in Woodbridge or Vaughn, Ontario Canada. They are both suburbs of Toronto with a lot of Italian families.

When I was a child (England) the only pasta we ever had was in sweet puddings-macaroni and vermicelli cooked like rice pudding. Or you could get it in tins! I was shocked to find it in savoury dishes.

interesting that every Pasta e Fagioli recipe i've ever seen looks more like tomato soup than this creamy pasta dish! i definitely plan on making this!
My grandma and grandpa (from my dad's side), were from Corfu an island let's say next to Italy, which has been occupied by them for many years. The similarities are endless. They speak really fast and their accent is Italian and singing like. We call our grandmas nonna and our aunts zia 😅 we even have a dish called soffrito! I remember my grandma cooking meals for us just as mouth watering as these grannies. She had her own veggie garden. She was making the best meat ragu with lots of green peppers and tomato concentrate! I miss her cooking. These grannies remind me of her a lot!
It's maybe similar to Campania and Basilicata soffritto, because in Italian this word doesn't designate a proper dish. The word "zio/a" has greek origin anyway...
@@leandroulpio7473 nowhere else have I heard Greeks say zia so even if it has Greek origins I guess they use it because of Italians. As for the dish what we call soffrito it's a fillet(beef or pork) cooked with vinegar, white wine lots of garlic and lots of parsley. It's usually served with rice or fries and it's delicious!
@@aphrodite193 Of course it's an italian word nowadays. This dish is very different to the one cooked in southern Italy but a filiation from a previous recipe is still possible, since both have pork.

I have arthritis in my hands from punching stuff practicing martial arts. When I open and close my hands my knuckles burn. I also have arthritis in my hip from high impact martial arts training. Sunday for me is pizza and pasta day. I am trying to lose weight. I have been fasting a lot and made some progress. Americans of course hardly know anything about pasta unless they are lucky. My favorite is pesto with good cheese. Gotta go to the Italian Deli for good cheese.
Same here. Keep hands moving so they don't cramp up. Making Gnocchi how my mom showed me with mashed potato with flour to make the dough...she adds an egg too I forgot egg once and still liked it.
Mom makes hers red.. hard to find crotonese cheese now..dad called it snow on the mountain...grated at the table over the heap of pasta..that was my fav growing up.. but now Gnocchi with browned butter/olive oil.. and a mix of grana padana and manchego and squirt of lemon juice a bit of basil. And of course more cheese.
I'm trying to lose some too....but its a rare treat... made some boxing day using up leftover mashed potato yam.
Pesto is yummy too.
A lot of Americans think Pizza Hut is the best. You are lucky you grew up Italian. My father was a famous musician and I grew up with a party all the time and a lot of good food in Hollywood. The best food there is is very rare. I hope one day we can all share the best! Beverly Hills and Hollywood have some of the best food. I liked the all you can eat buffet at Viva La Pasta with three kinds of squid!
Ms. Vicky on the 1st recipe I'd like to say you had on a colorful, beautiful blouse, the recipe looks delicious, my wife is german/austrian from near Cincinnati, Ohio where their ethnicity is huge, & when we visit here kindred there, they ask me to cook appalchian meals, I do the same thing as Maria, I bring my own pots/pans, knives, cooking utensils, etc..I'm sorry , but we have no recipes like these, but we do eat a lot of beans, God bless you all

@@pastagrannies Ms. Vicky, ty & the cakes, pastries, etc... bakery items my wife calls them Bavarian bakery items,( an area in the german/austrian region) I agree on the knives also, & I prefer all my cookware as mine are always properly seasoned & well kept. God bless you all.
