Christmas Recipe for Bread Making Machines - Spiced & Malted Fruit Loaf December 2021

  • This is a delicious and easy recipe for making a gorgeous sweet, mildly spicy malted fruit loaf which is lovely toasted and spread with butter. It tastes very similar to a toasted tea cake. This recipe is for bread machines that have a setting for fruit loaves or raisin bread. It's spicy and slightly lemon aroma is absolutely great for a Christmas tea time treat or breakfast.
    I use a Panasonic bread maker. It is a Panasonic SD-YR2550SXC (this is not a paid promotion).

    Ingredients
    1 teaspoon yeast for bread machines
    6 ounces (170g) white strong bread flour
    12 ounces (340g) wholemeal strong bread flour
    2 teaspoons cinnamon
    1 teaspoon mixed spice
    1 teaspoon vanilla extract
    Zest of a small lemon
    2 tablespoons olive oil
    1 dessert spoon malt extract
    1 dessert spoon black treacle
    1 dessert spoon honey
    100 ml water
    300 ml milk ( i used oat milk)
    6 ounces (170g) mixed dried fruit

    That looks like a great loaf of Christmas bread.I know you said the recipe is for a bread machine but I think I can easily tweak
    It for a hand made loaf . Thanks for the inspiration🥰

    On this side of the pond, the bread machines want the wet first, then the dry. The yeast goes in a divot in the top of the flour and the added ingredients are added by opening the lid when the machine beeps. Still, worth a go.
    Black treacle (molasses) is easy to find here, but not malt extract. I wonder if it has a different name? But I will look.

    That looks lovely, thank you very much for the recipe, I'll be giving it a go. I use mine to make and prove the dough very often but shape and bake it myself...... could get Paul back out of retirement .... your breakfast now has me hunting through the kitchen for things to eat lol !!

      Well, my secret is.... it wasn't butter! We use a cholesterol reducing spread!

    I wondered if the rest phase saves electricity like the "standby" in the inverters and air/heat conditioners?

      I think it is a low power state which applies a very small amount of heat to bring all the ingredients up to the same temperature.

      The machine is fully automatic....you don't set a temperature yourself....it does it all for you.

    I just wondered what happens if you have a power cut. Does it carry on when the power is back on?

      Good question but I have no idea. Thankfully power cuts are very rare here.

      Ah yes. It is a consideration....I'm not sure whether the machine has a 'memory'.....I'll have to investigate!

      @@RichardandPaul Great as with my bread maker i used to have before i gave it away in the instruction book it said if we had a power cut then we would have to start again.

    Brilliant - but you need to stop these recipes as I am putting weight on just by watching LOL
    A little tip for you when loading up the Panasonic seed/nut/fruit dispenser: toss sticky dried fruit in a bit of flour before loading it into the dispenser especially if using the delay cook timer - sometimes things can stick in there if you don't. Hope this helps your bakes!
