  • Ever wondered what to do with the soybean pulp (okara)? They make delicious patties like this recipe.

    Ingredients
    1 lb (~453g) soybean pulp
    1 small carrot finely diced
    2 stalks green onion finely chopped
    ¾ cup (94g) all-purpose flour or use gluten-free flour
    2 tablespoons cornstarch
    1 nori sheet cut into strips
    1½ teaspoon salt
    ¼ teaspoon mushrooms seasoning
    dash of pepper
    ½ cup of water plus more if needed
    cooking oil
    toasted sesame seeds as garnish
    Sauce
    Sweet Thai chile sauce
    a handful of chopped cilantro
    a squeeze of lime juice

    Thank you for this amazing recipe!!! I swapped a few things around since I didn't have spring onion and mushrooms at home, added about 2 tbsp nutritional yeast, a bit of garlic powder, grilled pepper powder and greens, no additional water was needed, and I upped the flour etc more since I had 100 grams more pulp. They came out soooo addictingly delicious!!!! 😍😍😍😍

    Just tried this and it's so tasty! Tofu can be very expensive where I live so I decided to try making it myself. Now I have a use for the okara too, so budget friendly!

    The quantity was perfect because it was exactly what had remained after I had made soy milk with 1 cup of dry soy beans. Next time I will add another nori sheet, though. I like the 'fishy' taste to be stronger :) Thanks for sharing!

    I accidentally undercooked them a bit, so they were a little grainy, but they're perfect when I heat them back up in the air fryer! So glad I didn't have to throw the okara out.

    Hi, once the patties have been made are they freezable and pan fry once defrosted? ❤ new subscriber.

      Yes, you can! :) I would light pan-fry or toast them to make sure the inside is warm.

    Are you using raw, uncooked okara -- or are you using cooked okara -- in this recipe? I know a lot of people (maybe most) cook the okara before straining it out, so wondering if my uncooked okara would work in this recipe.

      Since it's a bean pulp, it is better to use the cooked form. If you've got uncooked okara, toast it or steam it and use.

    Thank you for the recipe. I followed your instructions and the consistence was perfect. But I added an Egg instead of water and 2 Teaspoons miso. As I'm no vagan, so no problem with the egg. The patties in taste were nice, but not great - I think my fault. Every vegan or vegetarian patty I tried, they have always the "veggi" taste - I'm missing the umami taste. Next time I will try some feta cheese, sellaria powder and mushrooms. What are your ideas to make veggi patties more umami for meat eaters?

      You're adding feta for "umami"? Lol. You're not craving umami, you're craving fat, because meat eaters can't enjoy food unless it's got cholesterol and saturated fat.
      This recipe is based on traditional okara dishes, not cheeseburgers. Learn to eat your vegetables.

    I just making soy milk today .( not using milk machine) Should I heat soybeans before making this?

    I don't have time to fry patties so I might make it into an okara meatloaf. Then I can also go oil free with it.

      Ah, in that case, you might want to increase the cooking time as the meatloaf shape might be thicker. Yes, sounds good on the oil too!

    Think I must not have used enough water when mixing everything together. Quite grainy and falls apart easily after cooking. Will have to try again!

      I usually cook the okara with the soy milk and then filter. This way the okara is more enjoyable and easily digested.

    Is your okara dehydrated? I think I maybe I shouldn’t have added water. Mine didn’t really get crispy like I expect. Still good but not the texture I expected.

      Yup, it's precooked, straight from after I juice them out.

      Hi Jessica, I didn't cook the okara, it's simply the pulp from the soymilk and mold it into patties.
