Home Made 'Just Egg' & Making TikTok Pizza Omelette

  • A while back I saw a recipe on TikTok called Pizza Omelette that I really wanted to try to veganize. Which meant that I needed to make my version of the Just Egg liquid which we we can finally get here in Calgary.
    Last year I did some research on how to make my own and realized that the Just Egg uses mung beans. I do recommend straining the mixture through a nut milk bag or cheese cloth to get the smoothest texture. You can used this mixture to make mini-omelettes for breakfast sandwiches and a frittata.
    My recipe is based on the Vegan Egg Mix by Liv B. The Edgy Veg also recently released a muing-bean egg recipe. I've linked both recipes below.
    Vegan Egg Ingredients
    1/2 cup dried skinless split mung beans (also called Moong Dal and are yellow) soaked for several hours or overnight. This is important as it will help them to blend up nice and smooth.
    1 cup plain unsweetened almond milk
    1 to 2 tbsp olive oil
    1 tsp baking powder
    2 tbsp nutritional yeast
    1 tsp garlic powder
    1 tsp onion powder
    1/4 tsp turmeric
    1/2 tsp Kala Namak (Indian Black Salt) or plain salt if you don't have kala namak or don't like it.
    1/2 tsp tapioca starch (flour). see note below
    Directions:
    1. Soak the mung beans over night or for at least several hours. If you don't have a high speed blender such as a Vitamix or Blentec then soaking overnight is recommended.
    2. Drain and rinse beans and pour the drained beans into the cup of your blender.
    3. Into the blender cup add the almond milk, oil, baking powder, notch, garlic, onion and turmeric. DON'T add the tapioca starch right now.
    4. Blend on high for a few minutes until well blended.
    5. Once you've got the mixture nice and blended, add the tapioca starch and blend for another few seconds until well mixed in. The reason I leave this till last is that the blending process will heat the mixture and I don't want the tapioca starch to start to thicken it.
    6. Strain the mixture through a nut milk bag or cheese cloth. I think this is important because it ensures the mixture is nice and smooth.
    7. Pour into a jar and store in the fridge for up to a week. Shake it well before you use it.

    To make the TikTok Pizza Omelette
    1. Into an oiled frying pan add slices of pepperoni to basically cover the bottom loosely.
    2. Sprinkle a handful or 2 of mozzarella cheese over top.
    3. Sprinkle with Italian seasoning.
    4. Cover and let the cheese melt.
    5. Once it's melted, pour just enough of the egg mixture to barely cover the pepperoni and cheese. Cover again to let the egg mixture set a bit.
    6. Drizzle a little bit of pizza sauce over top and then place a large tortilla wrap over top.
    7. Cover and let cook on low for a few minutes to make sure the egg mixture is cooked.
    8. Carefully flip the omelette over and let the tortilla toast a bit.
    Enjoy. I like to fold it and dip into extra pizza sauce.

    I absolutely LOVE your tiny house. It's the best layout I've seen and I watch a lot of RUclips for tiny houses. I don't know that I'd ever get one but if I did it would be your design all the way. Most tiny homes that I see have lofts for sleeping which with my knees and back I couldn't do. I also love to cook and I love your kitchen design. I've been watching your channel for about a year-year and a half. Love Sophie as well. When you move your tiny house will you still be making video's of your tiny house adventures? I hope so. Have a great rest of the week. 🥰

    Looks great 👍. I'll have to give this a try. I made a lazy veg & bean stew today in the slow cooker.........throw everything in, turn it on a low setting then forget about it until it's time to sit down and eat.

    Can't wait to try this! Your ingredients are pretty clean, I recommend non-aluminum baking powder though. Can you come up with a recipe for a clean pizza sauce? Love your videos, thank you!

      I’d just go with an organic tomato sauce and add garlic and Italian seasoning for a clean pizza (and pasta) sauce.

    Adelina, I wanted to share that I made the Peanut Butter Loaf. I subbed honey for the sugar and used a gluten free flour blend, came out pretty darn good. Next time I'm going to use 1/2 the amount of honey and increase the peanut butter a tad. Thank you for the inspiration!

    Ooo! That omelette does look good, but I'm mostly intrigued by your egg recipe. I don't usually buy the Just egg in the bottle, but I do love their frozen folded egg for sandwiches. Do you have a special technique for making this into a sandwich? The one time I did try that with the bottled Just egg it was quite a mess and not worth that trouble.

      I normally make mini-quiches in the extra large muffin tins. I’d you line them with parchment paper muffin liners they don’t stick. If you were to only fill them partially I think they’d be perfect size for a breakfast sandwich on an English muffin or bagels.

    When using the store bought Just Egg I freeze it in ice cub trays. It doesn't affect the taste or texture. And it takes that 5 day use hint out of the ratio. Have you tried freezing your egg mixture? Thank you.

    Video says 2 tablespoons of oil while the written description calls for 1 to 2 teaspoons, which is 1/6 to 1/3 of that amount. Turmeric and tapioca quantities are also inconsistent.
