- 2 eggplants
- Vegetable oil for frying
- Salt & Pepper to taste
- Shredded mozzarella
- Marinara sauce
- Pecorino Romano to sprinkle in between layers
- Fresh shredded Parmesan on top layer
- Fresh basil between each layer

I love eggplant Parm. Unfortunately the mom & pop Italian cafe we went to closed during COVID. No one else compares to that little eatery. 😢 I am handicapped & cannot stand at the stove to cook it anymore. 😢 Yours looks so delicious! ❤
