You haven't been to the south yet. visaya's and mindanao dishes are more toward seafood due to the region is surrounded by ocean. some region love spices in the dishes and some put coconut milk. Have you tried kilawin tuna or adobo with coconut milk and chilis. you have'nt even scratch how much dishes there is in the Philippines.If you want to know about your culture you have insert your self in the culture.
