If you love to indulge in regional cuisines then this episode might come handy in engaging you with the culinary collage of one of the most popular South Indian cuisines, the Telugu cuisine that is known for its spicy and tangy flavours. It is native to the Telugu speaking population from the states of Andhra Pradesh and Telangana and has three distinct categories-the coastal Andhra cuisine, the Rayalaseema cuisine and the Telangana cuisine- that have been shaped by the varied topographical influences.
In case of cereals, rice is a staple of the irrigated Andhra region and also Rayalseema too. Ragi is very popular in Rayalseema. In the semi arid Telengana, millet-based breads (roti) are predominant. The cooking techniques are also diverse in all the three regions. Across all zones we noticed a liberal use of spices in the food.
Meat and seafood (coastal areas) feature prominently on the menus while dal (lentils)is also a common dish in the veg section. Tomatoes, coconut, chilies and tamarind are generously used in curries. Spicy and hot pickles and chutneys are common accompaniments in the Telugu cuisine.
So let’s get started with this enlightening gastronomic exploration with our amazing host Sankalp Vishnu as we brace ourselves to savour and discuss some of the popular traditional delicacies of the Telugu cuisine. We visited three celebrated restaurant that have earned the fame for serving the best and authentic versions of these respective cuisines in Hyderabad.
For Andhra cuisine we went to The Spicy Venue at Jubilee hills. Here we met the owner Sampath who introduced us to this cuisine and over the due course of the meal, shared many insightful details about it. The spread here was extensive, spicy and tangy but super delicious. We started with pain plain Rice and ghee which was the staple and then moved onto the popular traditional veg and non veg dishes. The feast ended with the most delectable apricot dessert that we had ever tasted.
Our next destination was Rayalseema Ruchulu where we tried some of the traditional Rayalseema delicacies. The curries were quite similar in flavour to the Andhra ones though there was a notable difference in the spice quotient and the sourness aspect of the two cuisines. All the curries and chutneys were mostly paired with either Ragi Sangati or Jonne Rotte. The bottle gourd halwa is the popular dessert from this region. The food here was equally scrumptious.
Finally Sankalp took us to Mercure hotel on the eve of Telangana Foundation day to try the authentic Telangana spread that was being showcased there on this special occasion. The chef in charge introduced us to the popular dishes from the region. We then had a hearty meal along with the palm wine, a traditional alcoholic drink native to this region. The sweet dishes included the arise and rava ladoo.
We extend our heartfelt gratitude to all our hosts including our gastronomic partner Sankalp bhai. This cultural connection through the regional culinary traditions wouldn’t have been possible without their hospitality, support and cooperation.

    Best Food in South
    1. Andhra / Telugu cusine : Just for the Varieties they have - If they can serve 50 different types of Biryanis ,more than 500 different non vegitarian dishes and a thousand different Vegitarian curries , this is the go to place for food to explore.
This is possible just because of the state has three different regions and each region has different recpies .
2.Karnataka: : Good thing about Karnataka’s cuisine is that it takes influence from its neighbours like Kerala, Andhra Pradesh, Tamil Nadu and Maharashtra.so you get all flavours from all other states . However, the flavours change from region to region. Mangalore and Uttara Canara are famous for their tangy seafood. South Karnataka is known for various types of Bath. North Karnataka food is much spicier in comparison to the other parts of Karnataka. Food grains such as ragi, rice, jower, urad dal, semolina are some staples. Palm jaggery is also an important ingredient in Karnataka’s cuisine. Traditionally, meals are served on a banana leaf.
3.Keral Food : Kerala is the land of exotic spices, so do not be surprised by the spicy curries and dishes of this state. Kerala cuisine is a blend of both vegetarian and non vegetarian dishes but spiciness and taste assuring that it lingers long in your mind.
But the only problem with kerala food is that they use coconut oil for cooking , which may not go well with other parts of India
    4. TamilNadu: SAMBAR SAMBAR SAMBAR - if you think of Tamilnadu , only thing you think about is SAMBAR .They are specialists in making SAMBAR. They literally eat /drink sambar everyday . next comes pongal and they have also mastered the art of making pongal .kothu parata and kalaki omette are their speciality .
All other dishes are highly over rated but not worthy at all

I have been around all of South India, but when it comes down to veg meals, Andhra meals are the best! For non veg meals, I prefer Kerala. Having said that, Tamil Nadu sambhar and Coorgi pork are also my favourites. I am from Assam by the way, incredible India!

Food looks great, AP is known to be the spice food capital state of India. If the food is too spicy for taste it can be cooled with Kingfisher, British Empire, Horsepower or even 2000, however if none are available the curd also works well for cooling 😃

Anubhav, what I enjoy about your food vlogs is the ease with which you seamlessly adjust to the environs and the cuisine of various places.. be it the rustic dhabas of Bihar or the star standards of these hyderabadi fancy restaurants.
I have had some experience of Andhra foods at various places all over AP and I fear the heat element of their spices. So I really liked how you adapted to the spiciness of the food presented before you.
I seriously missed the authentic hyderabadi Biriyani or the unmissable Pulihora (tamarind rice) or the lip smacking Haleem
    Thanks for the visual experience.

It is a succession of fashionable restaurants. I am happy to see the rich side of India. Meat patties look delicious. Meat dishes are also abundant. It is sprinkled with peanuts. This is likely to be popular if brought to Japan. There are a lot of healthy dishes that make the most of the flavor of the ingredients. Thank you, God.

the host does not have minimum knowledge on rayalaseema topography, crops, culture and cuisine.. his description in english is atrocious. he should have avoided using the term "lower communities". seems he is insensible and harbors wrong notions about people living in rayalaseema. feeling very sorry anubhav sapra ji.

Totally agree with you, same is the case with the the spicy venue guy. I'm only half way into the video but the lackluster description is very annoying and disheartening. I'd urge the Delhi Food Walks guy to wander around with someone who has sound knowledge and understanding about their cuisines
