Central Fl here. You can bake. I have baked in my BBQ grill or use your cast iron and fire wood. It is do able. Give it a try and let us know how it goes.
Jess and Maya and family, congratulations on making it through hurricane Helen and everything did not get damaged on the wayside and you're making it through what damage you did get from hurricane Helen. I'm proud of you for making it through the bad night that you had and your kids treefort did not get damaged. Just everything around it. Again, I'm very proud of you. Jess and Maya and family for making it through hurricane Helen 😁😁😁😁❗❗❗
Looks good Jess! The baking soda also helps lesson the sour taste. But you know Ma'am - If you have a covered BBQ, you can bake in them quite nicely. Especially if you have a cast dutch oven...which i know you do..lol. Speaking of which, a video of you baking bread (or a whole meal) on an open fire might be useful for some ...and fun or sure...Let the cast iron shine!! Just happens that you have an ample supply of firewood right outside your door to generate the coals needed! LOL. Good video!
Cooking over an open fire is a good skill to have. It does take practice though. I have “ The open Hearth Cookbook and The Little House on the Prairie Cookbook, which is more for fun and another one which if I find it I’ll let you know!
I am not sure what I was more excited about the recipe or the spray bottle. I thought were just adorable in which I had to order while hubby was sitting here with me laughing and he said of course your going to buy it! ❤many blessings
Wow, that beats the peanut butter and jelly sandwiches we had for breakfast yesterday morning when our power went out thanks to Helene. Can't believe you still have a smile on your face. Hang in there!
Tell Maya my husband hooked our well to solar by itself... For that reason alone Where you have no water it's invaluable...we have a farm too....many animals with NO pond as a backup
As a kid, we always made waffles when we went camping. My favorite topping was peanut butter. I loved the way it would get all melty and gooey, and go into the impressions in the waffles. Yum!
I use propane. I’m in Southwest Florida, where Ian got us two years ago today. 18 feet of storm surge. Totally devastated our area! Hurricanes are a force to be reckoned with! It took me two days to prep for Helene. But here hurricanes are a fact of life. Not so in Georgia, Tennessee, Kentucky, South Carolina. I’m praying for all in her path. Stay safe everyone!
I'm so glad the farm came out the storm in such good condition 🙏 Haha I opened youtube for something to watch while making some sourdough pancakes for my kiddo and here you are with yours! Love it 😊
"If you've ever cracked into a rotten egg, it changes you 🤣". It sure does. Last year I got some eggs from a farmer down the street before our chickens started laying and there was a rotten one and MY WORD
Hi Jess, I was on Roots, and Rescue this morning. I live in NM, some of my my ancestors came from Spain. They introduced the horno to the Native Americans.
We love sourdough discard pancakes! I've had a sourdough jar for about 9 months now and we affectionately call it Bubbles. So the pancakes I make with it are Bubbles pancakes and my daughter loves them.
So amazing having watched all the children grow up. Ben is growing as fast as a handsome little weed! 🥰. You guys stay safe and all will be in my prayers! 💜🙏🏽🙏🏽🙏🏽.
Hello from Covington GA! Alright! You are doing Sourdough 😂. I'm so happy. It's easy right. People make it way more complicated than it really is. There is a learning curve but once you got it. It's a skill that is invaluable. ❤ I have a candida issue so I have to watch out what I eat. I keep my started in the fridge. I control it to feed and how much starter is waiting for me when I decide to use it. I bake lemon bread with my discard. 😋 Sourdough starter is what helps me eat bread and not get issues in my intestines. If I use those packets of yeast, forget it. It has no acid so my gut gets wrecked. Funny that you mention baking Sourdough bread before the storm because that's exactly what I did. 😂
THANK YOU! I just unpacked my oil sprayer that got delivered from T..u this morning! I thought I'd try this one since my other one broke after about a year. I was just looking at it trying to figure out how that tube was supposed to go ... and did they send me something wrong because the bottom was flared with that screen thing on it ... But I just saw that that's how your was so now I'm off to wash it and start using it. It will replace the 2 bottles on my counter. Glad to see you're all safe!
Ever since making sourdough pancakes a few months back.. it is the ONLY way I enjoy pancakes! They aren't as heavy on the tummy and I feel so much better eating them vs regular pancakes. Delicious. .. I am also so relieved you and many others we see on YT are thankfully ok. - Rose, Australia xx
We here in N fla took a direct hit up to 3 days we just got power. I did hold off on setting up my new greenstalk planter and I have not sowed anything yet. Prayers for everyone.
I'm glad you all are ok and the animals too. I bought the oil spray bottle about 2 months ago. I still get it out and tell my husband how much I love it. Lol😅 Blessings
I would worry that it would clog up & that it would be impossible to wash clean to start again. I’m guessing that very regular use would prevent clogging up but I also use ghee for frying now so oil is used a little less ❤
Thanks Jess! Never thought of making pancakes with my discard this is a great idea. I makes an awesome blueberry muffin usually with mine. I'm thinking I will do this on the weekend. Also we are praying for everyone effected by hurricane Helene. 🙏
I have those oil dispensers. I love them! I’m cooking and canning everything I can right now to try to save all my food. We don’t have a generator. I’m so thankful for my gas stove!
I actually have that exact sprayer, and I love it, too. Mine is like off-white, because they were out of all the great colors. It's so handy. Thanks, Jess!🌻
Thank you for taking your time to share a delicious recipe during this time. I am sending prayers for you and all the people in the area. God Bless you all🥰💕🙏
We used to have an off-grid vacation property. We "stacked" two well pumps together. One pump was an electric pump, and the other was a hand pump. If we needed to conserve generator fuel, we pumped our water by hand.
I'm so glad you all weathered the storm! Have you ever considered the stiff starter method? It greatly simplifies managing starters and eliminates waste.
Im loving this content jess. Ur investments in ur way of life snd farm are really paying off when i saw h smile while cooking pancakes for ur kidoes. ❤ still being able to be jn fresh air and enjoy a warm meal with loved ones
Thanks for sharing your updates on both channel, get ready because it will be a trying time during recovery, I live in Houston and recently went thru hurricane Beryl, was without electricity 11 days during hottest part of summer, the good news is that it’s Oct. and it will be easier for you all
Thank you for this recipe, Jess! You’re right about pancake preference… my grandma made buttermilk silver dollar pancakes and all of us cousins (we’re now in our 50s) have tried to replicate her recipe. 😉 Have a great day and enjoy “camping”.
Thank you for the recipe. I will be making some after I redo my starter from the beginning. Hearts and flowers coming your way. Stay safe and healthy. ❤️💐
We live in central NSW, Australia have natural gas for stove top, 100 year old working wood oven and also wood fire and outside BBQ so if we have no power we are ok but we don't have power source for fridge freezers if power is out.... My poor sourdough is living in fridge as I'm mainly Animal Based eating for health reasons ... Love discard pancakes...❤ Take care...❤
So glad that everyone came through the storm. I was just wondering if you have heard anything from Justin Rhodes, Ben Hollar, or Jason from sow the land . I'm praying that they are ok.
Not sure what happened to my last comment but it is gone.....love the bottles - great idea. Thanks for the link. We love our pancakes like a taco - smear with nut butter of any kind (almond is our fav) and fill with fresh fruit. Top with shredded coconut isn't bad either. Thought the boys might like to try these some time. Kinda like a taco bar for breakfast..
I am glad you and your family are all safe! I tried the pancake recipe. I liked it as did my family! I did not have any sourdough discard so I just used the sourdough that I had fed 3 days ago and was keeping in the refrigerator. It turned out great!
I am no sourdough expert as far as baking breads yet but have been using my starter to make sourdough pancakes for few years now. Just need to cups active starter (and that leaves little bit in quart jar to start feeding again). Got this simple recipe from someone online awhile back - sorry cannot give credit due? 2 c. active starter 2 eggs 4 T melted coc. Oil 2 T honey 1/2 t. good sea salt Mix all together well. Yhen add 1 t. Baking soda and whisk in The grands like to watch it rise and get bubbly (we count it as science experiment in our home) Pour on hot griddle 350° Makes about 18-20 pancakes (1/4 c. ish batter) I just leave my starter in fridge and pull out on Fridays and feed so we have active starter for Sat/Sun pancakes:) Looking forward to learning more about making breads, bagels, english muffins especially with whole grain flours like rye etc.
My message was cut off the horno is used outdoor to make bread stews etc. The horno is fueled with wood. It would be a great family project! I’ve been trying to get my husband to make one for me. I may look for someone to build one for me since my husband is so busy with other projects.

I saw a statistic today that said 4.3 million people are without power from the storm. The flooding in NC is just AWFUL. We have wind damage all the way up here in Ohio from it as well.
When I was hit by a tornado and had no power, I used my generator also for freezer and fridge, but also to run my water pump. I’d draw out water for cooking and flush toilets. What I did was shut down my whole electrical box but then turn on just outlets for the fridge and freezer and well pump. Plugged generator into the dryer receptacle. Only had to run generator a couple of hours a day.
