Going with this suggestion, back in the 90’s there was a cookbook called “Bread in Half the Time”. The premise was to use your microwave at a low setting with a cup of water in the back to help distribute heat evenly. I remember making Parker House rolls from scratch in something like 50 minutes. It might be worth finding a copy, particularly for the bake sales.
I've become a convert to overnight dough rising - the flavor is massively enhanced. No need to change the recipe, just do the bulk rise in the fridge overnight. In the morning, roll it out and it'll come to room temp quickly so you can add the filling and go from here. Much faster too, for the hungry boys!
Jess, I think you might want to look into Melissa K Norris's master dough recipe. I learned about it in her book Home Made. You can make the dough up to 2 weeks ahead of time, there's no kneading and you can then turn it into a bunch of different baked goods, including cinnamon rolls. I love it. Saves a lot of time and a ton of mess.

Cinnamon rolls are a Christmas tradition for us (and other times, too) but I like to get them ready in the pan the night before and let the 2nd rise happen in the fridge overnight. Pull them out in the morning and let them warm up while the oven preheats. Then you have a quicker breakfast. Less work in AM, which is especially nice on Chrismas morning. 😊
Just so you know, I had bought the 2 pack of 1 pound each yeast at Sam's around 1999. I also keep it in a jar in the freezer. It is still working even after all these years! I've also moved 4 or 5 times and had several power outages. We used to bake bread rolls and cinnamon rolls often but it seemed like once I bought that much yeast, we sort of stopped baking so much. Seeing you baking today has inspired me to see if this yeast is good today. If it has finally given up the ghost, well I can't really complain about my $4 yeast from 25 years ago. I'm sure it will be fine as it's only been about 3 months since I used it last. Happy birthday to your son.
Jess, have you ever tried creaming the butter, cinnamon and brown sugar for the filling??? I hated the process of trying to spread that really dense filling until I started whipping it. It spreads like a soft buttercream at that point! Way easier and doesn’t mess up the filling to dough ratio!

Happy Birthday Toby! Those look really good Jess! Just a little tip - I roll my dough, butter them, sprinkle on the sugar and sprinkle with cinnamon - I have even done with melted butter. Now I want a cinnamon roll!!
I bake cinnamon rolls weekly at a coffeeshop, the first time I ever did this I intuitively mixed the butter with the cinnamon sugar before spreading, and got a really funny look from the lady training me. She said essentially (I don't remember her wording perfectly): "honey, we do it differently here", and went on to explain that it's easier to spread the semi-melted butter on first and then sprinkle cinnamon sugar after. Having done this since I can say it is a good alternative method! Though if you try it, do NOT fully melt the butter (my next training misstep), you're looking for a thick ranch consistency of soft but not melted butter. Room temp and then microwaved for 10-20 seconds does the trick for me.

❤ Love the brown sugar/molasses tip. I have had mollasses in my pantry for years with the intent of copying my dear grandads early morning routine before bringing in the cows for milking.... ie. Light the wood stove, take butterknife, turn it on hot stove top, dip said knife n large molasses jar n twist to form a big blob, put in mouth n wash down with a big cuppa 😂 bless him, I still miss him since his passing in the 80's😊 He swore that it kept him v strong n healthy. Hi Jess🤗 I bought active yeast in bulk at the beginning of the pandemic, but usually I make sourdough bread and other recipes from my SD starter however, I wanted to make this recipe so I took my active yeast from the fridge and expected it to be a flop. To my surprise it was very active!!! It’s been about four years so if you leave it in the refrigerator and put it back asap it should keep well! By the way this is a great recipe. Happy birthday! Great that the icing has no cream cheese as I don't eat that. I never knew I could substitute the cream cheese for butter. Here traditional icing is simply powdered sugar mixed with water to a gooy mess and put that on, that that will harden when it cools/dries out.
I use half water and half milk (warmed of course) to proof yeast with my cinnamon rolls. The milk makes the dough SO tender. I think I need to make some soon. Great vid - thank you!
Works great to make the dough, fill/cut the rolls the night before and pop in the fridge. In the morning, you just pull out of the fridge for an hour (while the oven is heating) and bake them. Great if you want earlier!
I’ve had my dry active yeast in the freezer for at least 5 years and it still blooms perfectly! I don’t bake as often as I’d like, and I also buy it in bulk so one brick lasts me a loooooong time. Also, trying this recipe tomorrow. I used to have a recipe that I loved, but lost it 😢 it had mashed potatoes in it, which made them sooooo yummy! Hopefully this recipe will be as good as the old recipe

Years ago when o first started my accounting business I lost an important tax form I had filed. I had to redo it. I at least knew the amount I had paid for the tax so at least knew it was correct. It was then that I started a policy I continued for the 40 some odd years I was in that business. I would put multiple copies of such forms in various files so I never lost a tax form again. When in went digital I continued the practice by putting them on a few devices and a cloud drive.
I bought 2 lb package of yeast online In 2020 and kept it in the freezer and only JUST had to restock! This recipe is definitely going on my to do list❤

I worked in healthcare and the baker in our kitchen would make cheat cinnamon rolls. She made them using a tea biscuit recipe. They were delicious and much faster to pull together in the morning - no waiting for the yeast/dough to rise. You aren’t to think of them turning out like the ones you just made. They have the flaky texture of the tea biscuit. You could experiment with using a gluten free flour so everyone can get in on the treat.
I think I’ve used this recipe before. Yummy! Miss Lori from Whipporwill Holler has an amazing cinnamon roll recipe. It’s my go to now. The dough comes out beautiful every time.

Yeast in the freezer still good even a year+ expired. I found a bulk cube of yeast in the back of the freezer that was expired. I put it in the house freezer and started using it. Worked just fine until used the whole cube up over the following year.

A GOOD RISING TECHNIQUE: Boil a cup of water in the microwave, then put the dough bowl in the microwave with that cup of hot water. Works every time!

BTW, the raspberry rolls are delish! I use the freeze dried raspberries andd they come out pretty in pink and I avoid the rolls from over moisture

Hi! I found that if you spread the room temperature butter first then sprinkle the brown sugar cinnamon mix on the dough it makes it soo much easier!
