    After I watched this video, I went to my freezer and pulled out a jar of sourdough starter and let it thaw. I always freeze the excess starter, and now I am so glad I did. I have never made a fluffier, better tasting pancake in my life! They....are....fabulous. Thanks for this recipe!

    Love seeing a real recipe. Nothing too fancy, but they sound really good. Trying my hand at sourdough again, 1st time I didn't stay with it, but my father did. And kept my starter alive from April 2020

      Same here. My first try at sourdough/starter was not encouraging. I had two mason jars going, but my bread kept turning out bad - dense and odd tasting. I put the two jars in the fridge about a year ago and said "maybe someday." Recently my daughter expressed interest in sourdough, so I pulled out those two jars. The starter was solid, crusty, and brown. I thought "what the heck?" I added water and waited a couple days. It softened and started growing. I discarded some, added flour and water, and within a couple days it was smelling and looking fantastic. That was two weeks ago, and since that time I've made 4-5 loaves of the best sourdough bread I've ever tasted. Trying pancakes next.

    Made this recipe with my 'discards' today. Did half a batch, made 7 nice sized pancakes that rose nicely. Added my frozen blueberries to the last 3. They turned out great! Thanks for the recipe!

    Just cooked up my second batch from my discard this morning. They are super delicious! My hubby and grandkids LOVED them so much! light and fluffy and just the right ingredients! This second one I’m freezing again to prepare for whenever we need them for breakfast. This is a great way to use my discard any day I want to whip up something quick!

    I am a new subscriber and I wanted to Thank You so much for sharing this easy recipe. I was so nervous about trying my first recipe and I chose yours to start my journey.
    My mom had a sour dough starter that she used to bake from, and I was always afraid of having one. Although I seem to have a knack as a fur-mamma/nana, my house is where plants come to die. If the critter can't tell me he/she is hungry or thirsty...yeah...it's a gonner lol
    My daughter-in-law got my sourdough starter going for me and got her (Bertha) through her baby stages before entrusting me with her. Now she's easy-peasy and I was ready to try out my first recipe. I combed through multiple recipes and channels on RUclips, and your tutorial won me over!
    At any rate - I'm actually falling in love with cooking again. It has only taken me 13 years. Cooking/baking, etc was always something my late husband and I did together. When he passed, the joy was taken completely out of it. I cooked to feed my family, but was just going through the motions. But now, I'm excited about cooking from scratch, baking from scratch and canning and preserving for my family.
    I made sourdough pancakes for my granddaughter who is spending the night here for dinner tonight, and I got her seal of approval!!! She wants one for breakfast in the morning. They're so fluffy!!
    I take lousy pictures, so sorry I'm not sharing a picture of the actual pancakes, but they are "finicky kid" tested and Nana approved! Thanks again for teaching me how to make them!!!

    Constance, I made these this morning and they were wonderful. The only difference is I used fresh milled flour and added a little vanilla. And, they turned out beautifully. This recipe is my favorite discard pancake recipe yet. I will continue making them. Thank you for sharing this. Thank you for everything you share with us. God Bless you.

      It's hard to divide an egg in half unless you use cartoned eggs. I would recommend making a batch, and just freezing the extra. They freeze well and to reheat, I just pop them in a toaster. :)

    New subbie tonight. Did you leave your discard out overnight, or did you take it straight out of your discard jar just before you made the recipe? Also, how do you reheat your pancakes after they have been frozen?

      I have used it straight out of the fridge, and as fresh discard from the counter. My favorite way to reheat them is in a toaster oven.

    So, I noticed you use baking powder and baking soda, which is the usual leavening agent for pancakes. What are you using sourdough card for this case if not for leavening? Is it just for the flavor?

      @@marcalter1553 I'm sure the Bsoda and Bpowder are used to enhance rising as the discard (for taste) hasn't had the time to proof.

      Because this is just a discard recipe, the sourdough is for flavor, and so that it doesn't go to waste. It isn't given time to ferment and create the air, so the added leavening is needed.

      Discard can be used right out of the fridge for most recipes, unless it says otherwise :)

    You said you freeze them so you can have breakfast when you want...how do you go about freezing them...Thank you for sharing

      I place them in a freezer container with pieces of parchment paper in between. Then just stick them in the freezer. I find they reheat best in a toaster oven.

    I ran out of APF. Is it OK to use cake flour? I only have bread and cake flour on hand

      It *should* work, though I have never tried that. You may need to adjust the quantity. Add a little less than what it calls for at first, and then if it looks like it needs a little more, add the rest. You just want to make sure you have a good batter consistency :)

    I never toss what people call sourdough discards, instead I make bread, cake, muffins, rolls etc.
    Save them to take to senior citizens, people in need etc.
    Sometimes I take them to senior center so members can take a treat home

      Potentially, however baking soda doesn’t stay active very long once it is wet.

    Do the measurements change if I use active/fed sourdough? Every video specifies discard. What if I want to use my active sourdough that might be left over after making a loaf of bread?

      I've honestly never tried it with anything other than discard. I would *guess* that you could use the same measurement. It's worth a shot :)

      This is just using discard. You can mix it up and cook the pancakes immediately.

    Just making these now. Thanks for not starting the video by saying..." put one cup of starter,with 3 cups flour,2 cups water overnight" drives me crazy....when i want pancakes,i want pancakes...

    Why is the baking powder/soda necessary, isn’t that what the sourdough starter is for.

      This is a discard recipe, so the sourdough isn't being given time to rise.

      Try using a good quality rye flour

      When you done making it takes a couple weeks when the starter starting to work, be patient …
