The starter was solid, crusty, and brown. I thought "what the heck?" I added water and waited a couple days. It softened and started growing. I discarded some, added flour and water, and within a couple days it was smelling and looking fantastic. That was two weeks ago, and since that time I've made 4-5 loaves of the best sourdough bread I've ever tasted. Trying pancakes next.

But now, I'm excited about cooking from scratch, baking from scratch and canning and preserving for my family. I made sourdough pancakes for my granddaughter who is spending the night here for dinner tonight, and I got her seal of approval!!! She wants one for breakfast in the morning. They're so fluffy!! I take lousy pictures, so sorry I'm not sharing a picture of the actual pancakes, but they are "finicky kid" tested and Nana approved! Thanks again for teaching me how to make them!!!

It's hard to divide an egg in half unless you use cartoned eggs. I would recommend making a batch, and just freezing the extra. They freeze well and to reheat, I just pop them in a toaster. :)
New subbie tonight. Did you leave your discard out overnight, or did you take it straight out of your discard jar just before you made the recipe? Also, how do you reheat your pancakes after they have been frozen?

So, I noticed you use baking powder and baking soda, which is the usual leavening agent for pancakes. What are you using sourdough card for this case if not for leavening? Is it just for the flavor?
Because this is just a discard recipe, the sourdough is for flavor, and so that it doesn't go to waste. It isn't given time to ferment and create the air, so the added leavening is needed.
I have been saving off my discard for the last 3 weeks. I have about a cup worth. Is it okay as is to use in this recipe? Thank you in advance. The comments all sound wonderful!
I place them in a freezer container with pieces of parchment paper in between. Then just stick them in the freezer. I find they reheat best in a toaster oven.
It *should* work, though I have never tried that. You may need to adjust the quantity. Add a little less than what it calls for at first, and then if it looks like it needs a little more, add the rest. You just want to make sure you have a good batter consistency :)
I never toss what people call sourdough discards, instead I make bread, cake, muffins, rolls etc. Save them to take to senior citizens, people in need etc. Sometimes I take them to senior center so members can take a treat home
Do the measurements change if I use active/fed sourdough? Every video specifies discard. What if I want to use my active sourdough that might be left over after making a loaf of bread?

I've honestly never tried it with anything other than discard. I would *guess* that you could use the same measurement. It's worth a shot :)

Why is the baking powder/soda necessary, isn’t that what the sourdough starter is for.
This is a discard recipe, so the sourdough isn't being given time to rise.
No matter what it do. I simply can’t make sour dough starter.
Try using a good quality rye flour
When you done making it takes a couple weeks when the starter starting to work, be patient …
