I have just made this and it's delicious! I added a little bit of smoked paprika and a small squirt of tomato ketchup which tempered the acidity a bit. I also used chickpeas instead of butter beans. I guess it doesn't matter what you put in, but it's a great way of using up those old veg ends.
I was just looking at the weather forecast here for the next week or two. I think some hearty warming soups are very much on the cards! Just about to watch the ham & lentil video now!

You probably get asked this a lot, which IP would you recommend to a newbie? I like the IP pro but its outside of my budget, I'm looking to spend around £100. I'm not too fussed about the air dryer combo lid with the new duo crisp but also wonder if perhaps it worth getting the duo crisp with changeable lids anyway incase I do decide to use the air fry lid. I imagine I will mainly be batch cooking instant pot type meals, stews and that sort of thing as that is my preference. I would love your advice if you have the time:)

Have a look at that as there are some very individual factors that will guide you but I think your instincts are right re not needing to ‘go fancy’ as you never know if you’re going to get on with them til you start , so absolutely go for a 6quart (non air fryer) version from my perspective.There are some big reductions right now in US and UK . What's your renovation project? When I lived in Florence, homemade minestrone consisted of meat broth with broken thinnest spaghetti. Like angel hair pasta
@maddang1797 We bought a very old house with some pretty major structural issues but it is in the exact neighbourhood we wanted so we've gone for it. Now terrified!
On most models you click the saute button again to toggle between low and high. . If it is a model with a wheel, you click sauté then turn the wheel - the display should show it changing. Hopefully that should do it. Good luck

I make minestrone like this but never thought to add parmesan rind. I'll definitely do that next time!

How can I get the sauté on high, as I can't move it from low on my instant pot?
On most models you click the saute button again to toggle between low and high. . If it is a model with a wheel, you click sauté then turn the wheel - the display should show it changing. Hopefully that should do it. Good luck
Minestrone in Italy is made just like that, using anything they have available. The best cucina povera, or cuisine of poverty!
