The Best Homemade Brioche Bread

  • After trying this homemade brioche bread you won't buy store bought bread again. This bread was so soft and buttery. Having fresh bread beats store bought any day. This is a long process but so worth it in the end. Plan a few days ahead to prep for this brioche bread.
    Ingredients:
    For the dough:
    2.5 cups all-purpose flour
    2 tbsp granulated sugar
    1 tsp salt
    1 packet (2 1/4 tsp or 7g) active dry yeast
    1/4 cup warm milk (110°F/45°C)
    3 large eggs, room temperature
    1/2 cup unsalted butter, room temperature and cut into cubes
    For the egg wash:
    1 large egg
    1 tbsp water
    Instructions:
    Activate the Yeast:
    In a small bowl, combine the warm milk and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.
    Mixing the Dough:
    In the bowl of a stand mixer fitted with the dough hook attachment, combine the flour, sugar, and salt.
    Add the yeast mixture and the eggs to the dry ingredients.
    Mix on low speed until the dough comes together.
    Adding Butter:
    Increase the speed to medium and gradually add the butter, a few cubes at a time, making sure each addition is fully incorporated before adding the next.
    Continue to mix until the dough is smooth and elastic, about 10-15 minutes. The dough will be sticky, but it should pull away from the sides of the bowl.
    First Rise:
    Transfer the dough to a lightly greased bowl and cover it with plastic wrap or a damp cloth.
    Let it rise in a warm place for 1-2 hours, or until it has doubled in size.
    Chill the Dough:
    After the first rise, punch down the dough and cover it tightly with plastic wrap.
    Refrigerate the dough for at least 4 hours or overnight. This will make it easier to shape.
    Shaping the Dough:
    Remove the dough from the refrigerator and divide it into equal pieces. Shape each piece into a ball.
    Place the balls of dough into a greased loaf pan or shape them into desired forms on a baking sheet.
    Second Rise:
    Cover the shaped dough loosely with plastic wrap or a damp cloth and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
    Preheat the Oven:
    Preheat your oven to 400°F.
    Egg Wash:
    In a small bowl, whisk together the egg and water to make the egg wash.
    Brush the top of the risen dough with the egg wash.
    Baking:
    Bake in the preheated oven for about 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
    If the bread is browning too quickly, cover it loosely with aluminum foil.
    Cooling:
    Remove the bread from the oven and let it cool in the pan for about 10 minutes.
    Transfer the bread to a wire rack to cool completely before slicing.
