another nice, free class!! ii don't do much pork down here in Texas (IBCA), but very interesting to watch how these guys trim and inject
I’m guessing an IBCA trim for the few times the do pork is even more interesting. No 4 pound rule!
Great instruction, thanks Tim! I wish NBBQL would edit the footage again. They kept switching cameras and missed showing some of the key trimming.

Hey Brian! Sorry for taking so long to respond. The sweet and savory sauce is still in production unfortunately. Blues Hog is hoping to release it in the near future!
