I have seen your Brisket on your videos and it looks fantastic . Now that I saw this video l’m willing to try of trimming one. Thanks a lot for this video. I wasn’t for the longest time either. Felt weird to trim so much and why would you sauce everything? But, in it’s on way it’s very fun and it’s just a different game!
This trim might seem overboard but the results are good and consistent every time. I highly recommend trying it if you’re trying to up your brisket game!
I have that same exact knife and it doesn't seem half as sharp as yours. I do run it through a knife sharpener similar to the orange and black one on your table but maybe yours is better. What brand do you have (if you don't mind me asking)?
I’ll get it for you when I get home BUT, I’ll say this. Be aggressive with it! I at times will get metal shavings off of my knife. Then I’ll use the other part of the sharpener to smooth out the shaving I just did!
@@GulfCoastSmoke I think that’s the move. The last time I used my sharpener (2 weeks ago) I decided to go yolo and gave my knife the business and I think I could tell it made a difference. Appreciate ya!

If you boil some water to dip your knife in every once and a while your knife will slide through the fat a little easier.
Do you offer classes?
In IBCA cops why don't people turn in sclices of the point instead of the flat ?
