    Well sir...I have to say, that this was possibly the best, most enjoyable, most educational, and most entertaining, hour and forty minutes I have spent, in a long, long time! And like a number of others who follow you, I will be smoking a brisket for Independence Day. You got this video out at the PERFECT time.
    I have watched MANY barbecue videos over the years. Some of them better, and some worse, than others. But I have NEVER watched one as in depth, and thorough, as this one. I don't know you personally, but I feel like I have GOTTEN to know you SOME, by way of your videos. This vid is near, or AT, the top of the BBQ list. In my opinion, I believe that you were BORN to do this!
    I am a LOT older than you are, and probably older than most of your followers. And what I can say, is that you are what my generation called "a MAN'S MAN." Someone that OTHER men look up to, and admire. Someone who is no man's fool. A man that "represents" all of us, at our best. Call me a fanboy. Call this a bromance. Call it whatever you LIKE! What I call it, is one man, appreciating ANOTHER man, for doing what he most clearly LOVES doing. BBQ, is the (smoke) ring, that binds us. One day, I would like to be able to shake your hand, and thank you, in person...God willing.
    Thank you (and Mrs. Meat n' Greet,) for all of the time and effort!! Hard work DOES pay off. Happy American Independence Day!!

    brotherman, I can speak with certainty that this video is on par if not better than the Aaron Franklin's Masterclass. I've been intimidated by briskets but have known I wanted to get into cooking them for a few years now. I'm proud to say watching the two videos on repeat really helped guide me through the process of my first cook.     Legit straight forward, and very clear detailed instructions for smoking a good brisket! I have to add one thing. Anything you smoke, the better cut of meat you buy, the better the outcome. And most importantly, the pricier cuts show a little more mercy on rookies. They are harder to dry out or turn into beef roast because of all that marble that choice doesn't have. Even with that, learn with cheap choice brisket first! You get that right, when you buy prime it's going to be 🔥.

    THANKS TO THE RUclips ALGORITHM gods!!! About a week ago I started down a rabbit hole of 'how to' videos for smoking brisket and tonight the algorithm brought your video up for me and BY FAR!! this is the most thorough, detailed and engaging brisket video I've come across. The almost 2 hr video went by so quick with the way you presented everything. It was very detailed and nerdy but also still very fun and engaging, great work!! Thank you @Meat n' Greet!!     We are now family. It took all day between cooking pork belly burnt ends for a buddy and delivering them. Now cooking another batch for our party along with ribs for supper. Oh ya, made brunch on the griddle, all the while watching this amazing video. If you have made brisket several times or just starting I guarantee you will pick up at least 5 amazing tips.     I've been grilling over 50 years. Last year I drove 150 miles to buy a good conditioned, Oklahoma Joe Longhorn Offset. After making a few tweeks, I've been smoking meats several times a month (even in Pittsburgh winter-I have a gazebo). I have been following several of the RUclips Gurus but no one has taken the time to fill in all of the gaps. I've cooked 4 briskets to date with varying degree of success. I'm doing my 5th brisket for the 4th of July and with your guidance in hand, I expect the results to be spectacular. Thanks for the love!

    The temp of the meat determines how much smoke the meat will take on. Once the meat reaches a certain temp, that chemical reaction that creates the smoke ring stops. The colder the meat is when it starts taking on smoke, the more smoke flavor it will absorb and larger the smoke ring

    Probably the most comprehensive and detailed rooter-to-the-tooter instructional video on cooking brisket that I have seen yet, so bravo-zulu to you, sir. I have smoked many a brisket (and every other meat that can be smoked), but I still watch whatever I can to see if I can learn something new, whether a trick or a tip that I haven't heard before. I didn't really learn anything new from this one, but it was so comprehensive and detailed that I wanted to comment on it for anyone else just getting into the art. Well done!

    I just watched the video, and I appreciate your love for BBQ. I learned a lot from watching your video, and I want to thank you for the lesson. I have to say I'm going to be buying a warmer. It is the key to making a brisket go from good to great. I like how you cold-smoked in the beginning. It set your smoke ring, raising the temp as the cook rolled along, rendering the fat pushing the stall. Checking every 20 minutes is a game-changer. I've learned so much. It's the best hour and forty-minute video I've watched on RUclips. This video was awesome! Thanks again; my BBQ game will be on point thanks to your lesson.

    As I have been on brisket journey for 6-7 yrs and ruined sev I appreciate this. Finally moved onto a custom offset, smaller 18” diameter, so I have found to keep temps down 15degrees is over bigger ones.
    One thing Id rec is please please try the thermoworks system! I have the pens also…BUT, you can have those two areas probed thru entire cook, always monitoring, can see graph for another data/perspective point. Its such a pleasant exp. Today I am going for best Ive ever made, and recapping this vid again for notes.

      Also, I have resorted to using 1.5days for brisket. Ideally Id rest for 4-6hrs prob (exp would say). But that means up at 2am. So I cook like 11am-11pm then heated hold rest overnight. Ninja countertop oven reheat mode moves no fans at all and at 170 oscillates 162-174 and holds meat at like 158-160. Lunch next day is heavenly, wish I could post pics

    Big Frizz- youve done it again. Having cooked my fair share of briskets, one thing i know is there is ALWAYS something we can gain from other experiences. I personally dont like using a binder. Not opposed to it in anyway, i just dont know that ive ever felt it add something. However your Mustard and pickle juice binder got my brain GOIN!
    As always, your content is killer, and always entertaining. But most importantly i can feel your realism, personality, and passion come through in these very thoughtful productions.

      ​@MeatNGreetBBQ no for sure I'm rethinking my entire stance on binders. I never tend to have issues with my rub sticking. I tend to wait for the meat sweats to start grabbing onto the rub. But lately I've had a couple cooks puzzle me a bit. I think I need to dial back the temps a bit in the beginning stages and, well, give my rub a headstart at that conversion.

    I’ve spent 7 years studying, traveling to Texas bbq places, hung out with pitmasters picked their brains, catered events for free(they pay for meats) just to gain experience over and over again. if a video like this was produced at the start of my journey I would have probably cut out a few years and made great bbq sooner. Experience is important and teaches you how to deal with weather, unforeseen circumstances, and time management. I don’t regret it since I met a ton of great people, but ultimately this video gives you the in depth details that go from a good brisket to a great one.
    Attention to detail makes the difference.

    I really enjoyed your video. Here are 4 pro tips to make your amazing brisket even better:
    1) don't forget to season your sides of your brisket.
    2) I highly recommend brining the brisket in 64 oz of beef brotha and 1 cup the night before. this tip comes from Myron Mixon. i found it makes a thicker smoke ring
    3) Take a bread pan and smoke your beef tallow. that way it's also infused with smoke flavor. it tastes way better
    4) Use meat probes in the whole time so you always know what the temp is vs having to check every 20 minutes at the end

      1. I don’t season sides of briskets.
      2. Brining is the most unorthodox thing I’ve ever heard lol. I would highly advise against doing that unless you’re making corned beef/pastrami. In short, you couldn’t pay me to brine a brisket. Brining & injecting is for competing. This is back yard craft bbq here my friend.
      3. I don’t like smoking beef tallow. I’ve smoked many many gallons worth of beef tallow over the last 15 years and prefer a clarified unsmoked tallow. My briskets (as most do) get enough smoke flavor. I don’t need extra from smoked tallow. Also, I prefer the texture of unsmoked tallow.
      4. Meat probes are for cheaters 😅. I don’t need a meat probe and if you’ve watched my other videos I am anti meat probes. I think learning how to bbq without probes makes the most complete Pitmaster.
      I say all this with extreme respect. But given this is my channel in which I teach people, I wouldn’t feel comfortable subscribing to any of this advice or advocating for it, and wouldn’t pass it on to our other friends who enjoy the content.

    loved this video!!! I have needed a more informative video on this. I have been smoking meat for about a year and a half. I have never done a brisket. I just did some pour mans brisket and I think I over cooked it. I wish I would have seen this two days ago!! keep the videos coming brother!! Your part of my fam at this point!!     Frizz!! AMAZING AMAZING video. I'm so glad I caught this literally 1 day before I started a brisket smoke on a backyard vertical smoker in the middle of an Australian Winter.
    I've watched a lot of BBQ content before but catching this one - everything finally made sense.

    Thank you so much for this and the brisket trimming video. I’m new to smoking meat, I’ve screwed up 2 other briskets (badly) using other videos before I found yours.
    I just finished my 3rd attempt at a Brisket and it was incredible. My brisket looked night and day different from the last one after using your trimming video. I used my Komado Joe and Im so happy with how it turned out.

    10:04 I season brisket in a shallow lipped pan to somewhat control seasoning the kitchen. You want the bark on the brisket not to hear the bark from your partner when you get done making a mess.

    Much needed video for me my man. I definitely learned a ton. Most importantly I learned that a brisket could be done before 203 or 205 degrees. Ive tempted my briskets at 190 or 195 and they were very tender but I always thought that I had to take them higher and always overcooked them when I did.
