- I love homemade fried chicken. Like, I REALLY love fried chicken. But Korean style fried chicken takes the cake. It's easy, it can be completely gluten-free and we are going to make both the classic gochujang wings and one of my favorite sandwiches of all time.

@@MrBrightside44 nope, gochujang is just a chili paste so it’s possible for certain brands stocks to go up, but there is no such thing as gochujang stocks (ik u were probably joking but just making sure)

Korean family recipe tip: add a small nub of ginger (smashed not chopped - don’t eat this) and a small spoon of oyster sauce when you boil the chicken sauce you made
I guarantee you will not be disappointed
I like eating that nub of ginger in my Indian curry mom makes too

Steps for anyone following along:
Korean BBQ Sauce: Add gochujang, ketchup, mirin, soy sauce, honey, and brown sugar in small bowl and whisk until combined. Pour into small sauce pan and stir over medium heat until sugar is melted and sauce is at a gentle simmer. Let it simmer and reduce 4-5 minutes until syrupy before adding 4 grated garlic cloves. Pour into container and mix in rice vinegar.
Korean fried chicken: Season chicken with salt, pepper and fresh grated ginger. Let cure in the fridge for 1(min)-12(max) hours. Then dab chicken so its not too wet before coating in potato or corn starch. The coating should be thin. Prepare pot or fryer with 350°F canola oil before frying the chicken in batches to get a very light golden color (3-4minutes). They do not need to be fully cooked yet at this stage. Then increase oil temperature to 375°F and fry again in batches. They should come out in a crispy golden brown color. While chicken is still warm, toss in sauce and garnish with sesame seeds and green onions.

I've heard theres a mushroom called chicken of the woods that has a similar taste and texture to chicken, but unless you forage it yourself it will probably be very hard (maybe impossible) to find it

This recipe is truly hands down the best fried chicken, I followed the recipe for the wings and it turned out amazing, they are so nice and crispy yet they’ve got this nice flavor with the guchojang paste, ahhh just sheer perfection! ❤️
Just a suggestion from a Korean Fried Chicken lover. When coating the wings try painting on the sauce instead of tossing them in sauce. It helps the wings stay crisper. I've also started using Rice Flour and that seems to help with the crispiness as well.
I generally don't like Korean Fried Chicken or any sauce coated fried chicken because the coated sauce will make the chicken mushy instead of crispy after awhile. Will try your method, thanks.

Watch Babish's chicken wings video (I can't offhand remember which one but uhh I'm sure you can find it?) he goes over a method of frying, drying in the fridge and frying again that makes THE almost glass like shatteringly crisp skin that he left for like an hour tossed in sauce sitting in the bowl and they were still crazy crisp

We made it. We loved it.
Tonight we made Josh's Crispy Korean Fried chicken using skinless/boneless chicken thighs, and the traditional bredding.
On their own, they were fanfastic! Top marks.
We also made the sandwhich with coleslaw and pickles, following Josh's recipe. This was *not* as well received. The pieces of chicken that fell out of the sandwhich were better eaten alone.
We concluded that the slaw (which was tasty!) interfered with the sauce, and the sandwhich bread damaged the mouth-feel of the chicken and kept the sauce off the tounge. (as odd as it sounds)
My son pointed out that the crunch of the slaw overshaddowed the amazing crunch of the chicken.
Our conclusion: GREAT chicken. (loved that we used thighs!) Not good as a sandwhich filling. Next time we'll try the wings version!

Example: I like beef ribs but all I was seeing was pork ribs... talked to the butchers and I got my beef ribs. They will try to get you what you want, just ask them.

That's a good idea, but tbh I don't think you can make chicken wings healthier and get the same result. You can bake them but they won't be crispy.

Hi friends! I decided to write out the steps and I thought it would be nice to post them here. Tell me if I got anything wrong :) ( I typed it up fast so please excuse my grammar)
The Easiest Crispy Korean Fried Chicken (2 Ways) Joshua Weissman
Ingredients you'll need:
Traditional Dredge-
2lbs (900g) chicken wings, separated or drumsticks
2 teaspoons (6g) salt
1 tablespoon (8g) grated ginger
Fresh cracked pepper
1 cup (165g) potato starch or corn starch
- sauce
1/4 cup (85g)gochujang
3 tablespoons (45g) ketchup
2 tablespoons (33g) mirin
2 tablespoons (30g) dark soy sauce
2 tablespoon (42g) honey
1 tablespoon (15g) brown sugar
4 cloves grated garlic
1.5 tablespoons (24g) rice vinegar
Buttermilk Style Fry-
4 boneless skinless chicken thighs
1 tablespoon (15g) salt
1 cup (240ml) buttermilk
1 cup (150g) all purpose flour
3/4 cup (123g) potato starch or corn starch
Assembly of sando-
1/2 head green cabbage, very thinly sliced
1/2 cup (113g) kewpie mayo
1/4 cup (40g) kimchi, finely chopped
1 serrano sliced thin
1 bunch green onion
Juice of 1 lemon
splash of shirodashi
sliced pickles
4 buns, toasted
Steps for the sauce ( same for both chicki)
In bowl, add gochujang, ketchup, mirin, soy sauce, honey, brown sugar
Whisk until combined
Put into saucepan at med heat, while stirring occasionally until it comes to a gentle simmer (sugar melted)
Let it reduce for 4 -5 minutes or until syrupy
Add grated garlic.
Then pour sauce into empty container and add rice vinegar
Steps for chicken wings
Place wings in bowl and season with salt and black pepper, ginger
Toss it together, cover with plastic wrap and let sit in fridge for at least 1 hour or overnight
When ready to fry, dab wings with a towel ( salt released moisture)
Cover wings with potato/corn starch and toss to coat generously ( thin coating)
Fill heavy bottom pot halfway with oil and heat to 350 degrees Fahrenheit
Fry wings in batches. Till light golden color 3-4 minutes
Once all wings fried, increase the temperature of oil to 375 degrees Fahrenheit and fry wings a second time. Till golden brown 4-5 minutes
Drain on wire rack
Place chicken into bowl and coat with sauce
Cover with sesame seeds and green onions
Enjoy
Steps for sandwich
Medium sized bowl, whisk together buttermilk and salt
Add the chicken thighs, let sit overnight
When ready to fry, in bowl add flour, corn/potato starch
Then put the chicken in the flour bowl and coat thoroughly
Fry in 375 degrees Fahrenheit oil bath, flip occasionally, fry for 6-8 minutes and internal temp of 165 degrees Fahrenheit
Drain on wire rack
Then toss to coat in sauce
Assemble sandwich
Eat
Steps for slaw:
Chop up cabbage thin
In a bowl combine mayo, kimchi ( finely chopped), very thin slices of green onions, lemon juice, salt
Whisk together
Toss in cabbage and mix together

How to make something Korean
Garnish with green onion and sesame seeds
Just mix green onions with soy sauce vinegar and toasted sesame oil. Touch of sesame seed and chili flake before you serve it.
Ehh there are lots of unique Korean ingredients like Gochujang, fish cakes, doenjang, and kimchi.

I just made this for my sister’s birthday and it was a hit! Defrosting a frozen bag of wings from walmart works just fine haha. I admit, setting the oil to the right temperature was a challenge for me because I wasn't sure what setting of my stove would give me the correct temperature, but things worked out in the end and I managed to still produce crispy well cooked fried chicken 💁♀. Thank you for taking the time out to make this recipe and putting together this video 😄.

Korean fried chicken usually uses a mixture of flours for the coating that could be anything from AP flour and potato/sweet potato/corn starch. A dry breading of potato starch is more reminiscent of Japanese karaage. Also there are wet and dry batter fried chicken preparations that are common in Korea. I will say that the sauce looks like a close (and healthier version b/c usually corn syrup is used for its glossiness and thickness) match with more conventional recipes.

I tried Maangchi's recipe for Korean fried chicken, 2 x 11 minutes in the fryer, and my chicken was crispy even after reheating it in the microwave at work the day after... it was insane! But i do my sauce more like you, with gochujang instead of whole chillies. ^^ So good!

I’ve been making this for years. It’s always a hit. I always fry my chicken using this method. I do not add ginger to my recipe. I also add egg to my bowl of wings. Try it! So good.

@@richardtaveras3642 It was delicious, I used Tasty's recipe since I've been doing it for a few years now (before Joshua made a video on it) and I'm used to it. Although, the chicken doesn't stay crunchy if you leave it more than an hour after frying it, but the sauce is a pure delight.

This sauce works really well on fried tofu or tempeh. You can swap oligosaccharide syrup or malt syrup or even straight sugar for the honey. I use fried tofu cubes on rice bowls all the time

Decided to make this today, but instead of gochujang I used a Asian red chile blend. It came out great. I used a splash of white wine instead of moron mirin and it didn't make much difference. As a professional cook I really enjoy your videos cause they're short and quick and I can easily swap ingredients for things I have around my house cause I don't need to have them perfectly match yours. It's technique/execution that matters everything else is subjective to the people you're cooking for.

Yall should check out Baek Jong Won cooking channel on RUclips he's a really well respected chef in Korea and he shares a lot of recipes for korean food in a very easy manner. English subs are also pretty well done as well. During the cooking process, he also explains the alternative ingredients you could use if you're missing something. I swear, he honestly single handedly raised the average cooking skills in korea with his channel. I tried his Korean fried chicken recipe and it's really good as well.
I miss the fried chicken in Korea so much, and the sandwich you made looks almost exactly like the spicy chicken sandwich from Mom's Touch, a popular fried chicken chain over there. Yours is probably way better though lol let's be real
