I just had the mushrooms from CF and they had an orange colored sauce. Absolutely amazing! But looked nothing like this recipe.

Yes, the sherry has a sweetness to it 😋
Is there anything else I can add instead of the wine?
If you want to substitute the use of any alcohol, I recommend adding more chicken stock and lemon juice.

Ya know those are grown in chicken n horse manure. I suggest washing the mushrooms instead of just wiping them
The definitive guide on all things food, Cook's Illustrated, says that cultivated mushrooms can be either washed or brushed. So sure, wash them
