Kali Orexi’s Prasopita - Greek Leek and Feta Pie Recipe

  • Prasopita (Leek Pie with Home-Made Fillo Pastry) has everything - crispy, crunchy fillo; sweet and juicy leeks; creamy-feta salt bursts... it is an eating sensation!
    This video gives you step-by-step instructions on how to make this delicious pita, including how to roll your own fillo pastry. Rolling your own fillo pastry is a skill that can be developed with patience, perseverance and time. Your first two or three sheets of fillo may be a little holy and odd shaped, but before you know it, you will understand how much pressure you need to apply to the fillo to stretch it out, and when it needs to be dusted with extra flour because it's getting too tacky to work with. Layer by layer your pita will come to life, and the joy and satisfaction you will experience when you sit down with friends and family to share the fruits of your labour, will be enormous.
    The day Lucia filmed me making the prasopita, my youngest was at home, and without discussion or warning, she joined me in the kitchen and had a go at making fillo. I hope you will be as curious and courageous as her and have a go too!

    I have experienced this masterpiece of Christine's. My daughter still talks about this Leek Pie. Oozing with flavour, this is a culinary dream come true. Thanks Christine. Wonderful to see the younger generation involved.

      Love your phyllo skills, have made it a little differently, but it worked! This is similar to Spanakopita!
      Also loved seeing the lady make that soup from wheat, chicken and yoghurt, i have found i have Cypriot DNA which is exciting, thought all my relatives were mainly from Aegean islands, although Cyprus not far away!

    Beautiful video....this is a dying art! So happy to see you patiently teaching your daughter 👍😊 I swear I could smell the leeks cooking and tasted the end result. Have never used cornstarch with my flour...I guess that helps make the filo crispier? I know you are in Australia living ( I have lots of family and gave been there but health issues prevent me from flying .... my one cousin comes at least e very second year for the last 25 tears....always look forward to their visits ) but may I ask what part of Greece does your family come from? We were from the north - Florina. I love your channel and I wish you uploaded more often. I love the different talent you bring on. Hope you are staying safe and healthy. 🤗🇬🇷👍🇨🇦💕

      Hello Anna - my apologies - I missed your message when you originally sent it. We are having a fillo-making resurgence in Australia. Social distancing and harsh lock downs have given people more time to explore this form of culinary art - the silver lining to this grey cloud. Two weeks ago I received a message from a high-school student who, along with her entire (online) cooking class at school, was making this prasopita. Some of the students were even rolling their own fillo. (The students were of mixed backgrounds) Yes - my mum says the flour/cornflour combination does make the fillo crispier. My parents were both born and raised in Kastraki, Meteora. I visit quite often too. I was last there is 2018.       Thank you Maree! The rolling pin is curtain dowel purchased from a hardware store. If you are in Australia, Bunnings have curtain dowel. Call ahead to ask if they have the capacity to cut the dowel to the right length (not all of the stores have onsite cutting facilities) :-)))
