Beef Liver Pate for the [Carnivore Diet]

    I started making this Beef Liver Pate a couple of months into starting the carnivore diet. Even if I wasn't on carnivore, I'd likely continue to eat this. There are definitely days where I absolutely am craving it. The list of benefits of liver are long. Give it a shot for the health benefits.     4 TBSP Duck fat
    4 TBSP unsalted butter
    2 cloves Garlic chopped
    Thyme - 5 sprigs/to taste (leaves only) - finely chopped (helps cover any odd liver flavors)
    1 tsp salt
    1/2 cup beef bone broth
    Put above ingredients into food processor and wait.
    1lb beef liver - Cook liver in fat of choice on medium high heat until about medium well on both sides (He does it until blood starts coming out).
    Add to food processor while still hot. Blend everything up for a minute or two until smooth/desired consistency.
    Put in container, tap/bump container to help get bubbles out, and refrigerate for 3hrs at least.

    Sounds freaky even on carnivore but I love a heaped tablespoon of this spread over a reverse seared steak, it becomes meat butter.....

    My Mum used to make pate`s when I was growing up. She usually topped them with melted butter to help give something more when speading but it also sealed the pate` which I think helped it last a bit longer too.

    I woulda put it through a mesh strainer at the end myself but i like my pate smooooth :)

    Great vid and thank you for making it. Would you not have a better emulsification if you waited for all of the ingredients to be cold before blending?

      I've found that they blend better when warm and they solidify much better this way

    That looks A.Mazing! I only have a blender and can't drop $200 on a food processer--will it work in a blender? LOVE these videos, love the music and the whole vibe. Keep 'em coming! (but I always cringe at metal used in non-stick)

    I made like this once(rosemary) but it was chicken liver...it was way better then one you buy

    I'm going to try a low salt version to share with my dog. It's always a fight to hide his pills in something he can take. Helps if he sees me eating it😂.

    I enjoy the taste of raw liver more. You should try this will raw liver.

    My husband and I are new to the carnivore diet. What do you put this liver pate on? Normally I would think it would be put on some kind of bread or crackers. But since we're doing very very low carb we cannot do that.

      I found that using a Dash mini pancake maker to make carnivore Flatbread works great for sandwiches! I mix 2 eggs, 2/3 cup mozzarella cheese, a bit of salt, then spoon into a preheated mini pancake maker, you're shooting for a layer about 3/8" thick. I normally get about 4 flatbreads from this recipe. Cook for 2 mins, then flip and cook another 2 mins, remove and let cool, make sammich. I have also used pork rind panko added to the egg and cheese mixture in a waffle maker, but haven't tried it in the Flatbread yet. Great for burgers, ham and cheese sandwiches, and tuna sandwiches. You can make it savory, or add some monkfruit and cinnamon for a sweeter treat, haven't gone very far into experimenting in that direction though

    Made your pan fried salmon recipe it was really tasty but the tarter sauce was exceptional. How long can I keep this pate in the fridge?

    Is liver like steak in that it's safe to eat if you just sear the outside? I've overcooked and ruined this dish a few times now. So bitter. 😟

      Reduce liquid if you want to. There's plenty of butter for it to firm up in the fridge.
