How to Make Udon from Scratch

Udon (2 servings)
200 g all-purpose flour
90 g water
10 g salt
1. Combine salt and water.
2. Gradually mix in water to flour and mix with hands. Knead into a ball. Dough should be tough.
3. Place dough in ziploc and rest for 30 min.
4. Place bag between 2 kitchen towels and step on with heels until flattened.
5. Remove dough and fold edges toward center. Flip over and form into a ball. Repeat steps 4 and 5, five times, until the dough is “as soft as an earlobe”
6. Rest for 2 hrs.
7. Dust work surface with cornstarch and flatten with hand.
8. Using a rolling pin, roll into a rectangular shape that is 3mm thick and 30 cm long. Dust with more cornstarch.
9. Fold dough in thirds and dust with more corn starch. Cut noodles.
Tempura Batter
180 g ap flour
20 g cornstarch
5 g baking powder
1 egg
180 g club soda
30 g ice
Broth
2 cups katsuodashi
1 tbsp mirin
2 tbsp soy sauce
1 tsp sugar
salt, msg, to taste

have you heard about adding vodka to batter to make it fry easier and reduce gluten development?
Yup, i do that with fried chicken, i find the vodka crust slightly too airy and thin for tempura tho
