    Making this for dinner today. At first sight, of course this looks weird to me because I’m accustomed to browning my chicken. However, I’m also aware that this is a flavorful dish…and just a different way to prepare chicken. So, I will not knock it….until I try it…in a few hours!

    I know the fda labels duck as a meat that has to be 165F, i just cannot stand well done duck breast, i have eaten rare duck many times and the only thing that made me sick was raw mushrooms 😂

    10-Minute Tonnato Pasta Recipe: 2 servings 1 can tuna, drained 1 egg yolk Juice of ½ lemon ½ tsp salt, more to taste ½ tsp black pepper 100 ml extra virgin olive oil 200 g dried pasta of your choice Parsley, chopped for garnish Lemon zest, for garnish In a food processor, blend the tuna, egg yolk, lemon juice, salt, and black pepper until combined. Slowly drizzle in olive oil until emulsified into a smooth paste. Season to taste. This is the Tonnato sauce. Cook pasta until al dente. Toss the pasta in the Tonnato sauce with 2-4 tbsp of pasta water Garnish with more tuna, parsley, and lemon zest.

    🍔 BURGERS 🍔 EPISODE 5: THE KBBQ BURGER BURGER PATTY Burger blend from episode 1 Anchovy powder Salt GALBI REDUCTION 120 g soy sauce 40 g water 50 g brown sugar 30 g mirin 1 tsp black pepper 4 cloves garlic, smashed 1-inch ginger, smashed 1/2 onion, julienned 2 tbsp katsuobushi 20 g butter Combine ingredients in a pot. Simmer for 20 minutes. Turn off the heat and add the katsuobushi. Steep for 10 minutes. Strain and reduce until saucy consistency. Incorporate butter. PICKLED RADISH Radish 110 g rice vinegar 80 g sugar 150 g water Pinch of salt Combine all ingredients and pour over radish. Leave in the fridge overnight. SCALLION SALAD 2 stalks scallions, julienned 1 tbsp soy sauce 1 tsp sugar 1 tbsp sesame oil 2 tsp rice vinegar 1 tsp gochugaru Slice scallions, place in ice water, then pat dry to curl them. Combine sauce ingredients and mix with scallions right before serving. SSAMJANG MAYO 2 tbsp doenjang 1 tbsp gochujang 1 scallion, finely chopped 1 clove garlic, minced 1 tsp honey 1 tsp sesame oil 2 tbsp sprite 1/2 cup mayo Combine all ingredients SESAME BRIOCHE @joshuaweissman’s burger bun recipe with sesame seeds
