Special Request: Bun Bo Hue (Pho's Biggest Rival)

Special request from my dearest sister - Van and brother-in-law, Dan Phan. The family is coming down to San Diego for a visit from the Bay Area (about a 9 hour drive) to finish off their summer vacation with my nephews Wesley and Austin and they requested for me to make Bun Bo Hue. #BBH
Bun Bo Hue Ingredient List -
1. Pork neck bones, beef shank and beef tendon.
2. Fresh lemongrass stalk, yellow onion and ginger.
3. Fish Sauce, Rock Candy Sugar & Dried Shrimp Paste - (a.co/d/6Z26WPu)
4. Avocado oil, dried crushed chili flakes, chili powder, garlic powder, minced fresh lemongrass found frozen at many Asian markets.
5. Sliced white onion, green onions & cilantro.
6. Whole peppermint, Thai basil & purple cabbage thinly sliced.
7. Limes, garlic sambal & fermented fish paste (mam ruoc) on the table for usage.
