5 kg beef bones
5 kg pork shoulder
2 kg beef shank
3 kg pork hawk
3 kg beef rib bones
3 kg pig feet
2 heaping tbsp of salt
2 heaping tbsp of mushroom seasoning
2 clumps of rock sugar
1 ½ cup of fish sauce
10 lemongrass smashed
3 onion
5 shallots
1 medium clump of ginger
Spicy Sauce:
5 tbsp oil
2 tbsp annatto seeds
1 cup of chilli flake
2 tbsp chilli powder
Half cup shallots
1 cup of lemongrass
1 tbsp salted shrimp paste
Satay:
1 ½ cup oil
⅓ cup of garlic
½ cup shallots
1 cup lemongrass
200 grams chilli
1 tbsp mushroom seasoning
Pinch of salt
1/2 tbsp sugar
1 tsp fish sauce
1 tsp salted shrimp paste

As a Vietnamese-American, I actually learned how to make bun bo hue from you. My dad didn't teach me and I have never seen my mom make on her own. So thank you brother!!

if you want a good enhancement to the rock sugar, my family uses sliced pineapple instead which gives an amazing taste and dimension to the broth. Missing footage on how you assembled the bowl and the sliced cha lua/cabbage

I just had the first bowl of Bun Bo Hue in my life, and I immediately fell in love with it, hot dam I want to taste it again when I finish my work. All my life, I thought Bun Cha, Bun Ca were the peaks of Vietnamese noodle soups, but now, they are all just side dishes compared to this heavenly delicious dish

BBH when i'm fending and Pho when I want something lighter.
As a 40 yo Chinese who have traveled most of China, and once a rice noodle soup shop owner, I think Vietnamese has better noodles. This is simply because the Chinese don't care much about the authenticity of the soup base. Noodles are treated as quick and cheap eats, like fast food, and for that, nearly all of the soup shops we knew were using seasoning powder. Yes there are real bones and meats but they are compliment and sometimes for show.

i wanna ask bout the salted shrimp paste. when would u put it in the broth? when the broth is boiling hot or when its cold? bcus i heard that it should be put in when the broth is cold so that the scent would not be strong and make the broth smell bad

If im at a restaurant im ordering bun bo hue everytime, only cause my mom and relatives always cook pho during gatherings so I always had it growing up. We’re not viet so bun bo hue is only at restaurants for me

I had Bon bo hue for the first time a couple years ago at a viet restaurant. I wasn't really a fan, especially comparing it to the experience of pho.
I recall it tasting like Kapoon to me (a thai/lao chicken-curry-coconut base broth vermicelli noodle soup). It was almost like a cross over between pho and kapoon.
Actually I usually prefer Kapoon over pho, but bbh is a bit different. I guess it has a similar taste due to all the lemon grass, shallots, chillies and shrimp paste, which normally the avg home cool would just use a store bought thai curry paste, which utilizes these same ingridients except for more like lime leaf, galangal and maybe ginger. Also kapoon utilizes coconut milk (me in particular I like a more coconut milky broth than not). I'll have to give bbh another try some day.
Ps. Also btw Quang I'm not sure if you ever made thai/lao kapoon on your channel. Lets go, I'd love to see that.
