That fried banana you had Mike is no regular banana. It's a burro banana that is smaller, stubby and short shape than the average 🍌 . Because they are so soft, custard-like and sweat they are often used in Vietnamese desserts like saygo puddings, fried battered as is or sliced and fried into sweat chips. Not only found in Asian but in Mexico too! Please "like" this comment so he could see this! Thanks!

The likely reason as to why the banana is so sweet, is that it could very well be a Gros Michel variety of banana. Much sweeter in flavour, unable to be gotten in North America. North America typically gets the Cavendish variety. Nowhere near as sweet or flavourful.

Hmm Mike, Chicken rice is a dish by the local Hainanese in Singapore who as a dialect group are known to be good cooks and own many coffee shops cum restaurants on the island. Thus the chicken rice DID NOT originate from Hainan Island China.... their chicken dish is not tender, does not have jello broth under the skin and does not use pandan or wentong ginger which are found in Southeast Asia.
Mike, you're finally in Singapore. Seriously you're the best foodie ever please outdo the Michelin fellas and even Anthony Bourdain where our street food is concerned. You haven't tried char way teow, prawn soup noodles, buah keluak chicken, minced pork noodles, kambing soup and honestly the list goes on and on and on.... But yeah, live it up like you do :)

When you visit Singapore next time, please compare the Tian Tian Chicken Rice with the Ah Tay Chicken Rice (which is a few stalls down Tian Tian's). Supposedly, the former chef of Tian Tian had a fight with the owner and set up Ah Tay. I tried it and personally liked how more unctuous the Ah Tay rice was, while the chicken was more or less the same. I'd like to know your opinion on that. Nothing quite like a food rivalry as an excuse to compare dishes. :)
You finally came to Singapore! Enjoy the country - definitely visit Chomp chomp at Serangoon gardens and try out the hokkien fried noodles there along with some sugarcane and chicken wings, to die for!

Henry Ettoit It’s an adaptation and tweaked to be different. Singaporeans and Malaysians argue about whether Singapore created it or Malaysia created it but most will agree it doesn’t come from Hainan. Not even my Singapore Hainanese friends consider it to be a dish from Hainan.

Just got back from S'pore and miss it already! Also at Maxwell, don't miss the porridge at Zhen Zhen, the peanut roll at Weng Pancake, the tapioca and onde onde at Xing Xing, the almond tofu at Lao Ban,,,and almost everything can be had for about only US$3.00 or less...

That banana's a pisang raja, which translated, literally means king banana. When slightly overripe, it becomes really soft and sweet.

Chicken Rice is amazing! I personally prefer Char Sui Rice, more fat and flavour, especially with the chilli sauce all over!

The best oyster pancake is in Jalan Besar food centre. Their homemade chilli sauce really good. The one in Maxwell uses normal chilli sauce.

Cheap hotels are only a bit cheaper than nicer ones, it's worth the cost when it's a difference of a few dozen bucks (USD¿ haha)
