Why not deglaze the pan with the beef drippings?
You could absolutely use the beef drippings instead of butter, if that's what you mean. My pot didn't need deglazing because there was nothing stuck to it. But I was using the same pot for the beef and then the veggies and broth. So if it did need it, it happened when I added the broth after cooking the veggies.
