The Best Cheeseburger Soup

- Cheeseburger Soup
Ingredients
1 pound ground beef
1/2 onion, chopped
1/2 cup chopped carrots
1/2 cup chopped celery
2 garlic cloves, minced
1 tsp dried thyme
2 Tbsp butter
2 Tbsp flour
6 cups, diced potatoes
4 cups beef broth
2 cups half and half
2 cups velveeta cheese cut into cubes
salt and pepper to taste
Instructions
In a soup pot cook beef with onions, celery, carrots, and garlic until beef is browned. Add seasonings, butter and flour. Add diced potatoes. Stir in beef broth and half and half. Cook for 20 minutes or until potatoes are fork tender. Stir in cheese and cook until completely melted.
