Hi there Chef john. Ive taken the advice of three different cheeseburger soup recipes and compiled it into something a little different to make my own. Great advice on the worcestershire too. I believe Ill make the roux next time for a thicker soup. Yours looks fantastic. Shirley
OMG, why am I only discovering this channel just as WINTER is turning to Spring? Ok, Ok, Ok. The final soup is great and all, but at 4:40, depending on how hungry I am, I might just toss the cheese in, stir it up, and plop in on a hoagie roll and dig in. Also, I see this as more than a soup. Ladle this over buttermilk biscuits or a plate of your favorite pasta, you will think you are in comfort food heaven.
I make almost the exact same recipe for this that you do. However I will let you in on a secret. I add when I feel like it shredded lettuce and diced tomato with spring onions on top of each Bowl of soap. I saw the same recipe that you did on Diners Drive-Ins and Dives and it did look messy put into the batch of soup. I decided to try it on top my single Bowl and it was delicious and gave a little crunch and freshness. I live in Maine so I understand your weather and sometimes I just want it as is but other times I want to top it I've even added crumbled bacon to all of that on top. :-)
This is totally new to me. Cool. I love making soup - and the closest to this would be thick goulash. Totally different tasting of course, but similar in process. I will try this soon. The family will love it :) Thank you Chef

I don't see the connection, I understand the potatoes, we eat fries with cheeseburgers,but where does the carrots and celery come in. Oh, you said you have cold 9 months out of the year, herein s.e. Chef , loving this ! When we frequent a local pub, they just put diced tomato and green onion on the side, it's a nice texture if you choose to add any of the sides.

A quarter pound of butter [to start]? Or did you mean a quarter cup of butter and a pound of ground beef? Sorry that just jumped out at me right from the start! LOL! Still the soup looks amazing and I know it tasted awesome. Velveeta cheese works, too! I live in Montana so I understand the cold....(I was crazy enough to marry a Montana man, and I moved from my beloved Texas to Montana).
Yep, a quarter pound of butter to add into the burger fat. It is 80/20 so there isn't much fat to use for the roux. I love the great state of Montana, used to work up by Flathead Lake. Also been to Texas. If I had to pick it would be Texas, because the older I get the more I hate the cold. But I love the views in Montana. Thanks for watching, and have a great week!

The reason I used American cheese is because that is what the recipe called for. Just because it is something you don't agree with doesn't mean it is a huge fail. I don't understand the implication of culinary school having anything to do with being a "real" chef. Understanding knife cuts, cooking methods, weights and measurement, recipe development, food safety, cost control, management, inventory and ordering etc. can be learned while working in the industry if you work hard and keep your ears open and your mouth shut. I have spent 40 years learning and developing my skills, and am still learning, even today. I have taken many written tests and had to pass quite a few practical exams in my day to get positions that were seeking an executive chef. Trust me, just because someone went to school, doesn't mean they are good cooks, or that they can manage a kitchen, or can even deal with the HUGE amount of stress and bullshit that we have to put up with on a daily basis. I have met my share of them in my long career in this industry. You are correct, I did not attend culinary school, but I am calling myself a chef, because I have earned that title.
