Slow Cooker Cheeseburger Soup

- SLOW COOKER CHEESEBURGER SOUP
Look away if you are dieting! So sorry! :) This recipe is something you would see on the menu at a diner or at a pub. Great flavor and consistency. I use only 3 cups of chicken broth in this recipe, the rest of the liquid for the soup is Velveeta cheese and cream cheese, which is what also thickens this recipe. No need for flour or cornstarch in this recipe. Enjoy!
RECIPE:
INGREDIENTS:
1 lb. ground beef, browned and drained
2 russet potatoes, diced
2 carrots, peeled and diced
3 celery stalks, peeled and diced
1 white onion, diced
1/2 tsp. salt
1/4 tsp. pepper
2 tsp dried basil
1/2 tsp. garlic powder
3 cups chicken broth
1 lb. Velveeta cheese (add towards the end of the cooking time)
8 oz. cream cheese (add towards the end of the cooking time)
SLOW COOKER SIZE:
6-quart or larger
INSTRUCTIONS:
(note before starting this recipe, the total slow cooking time is 8 hours, the Velveeta and cream cheese are added at the 7th hour and cooked for 1 more hour)
Add the cooked beef, potatoes, carrots, celery, onion, salt, pepper, basil, garlic powder and chicken broth. DO NOT add Velveeta and cream cheese yet.
Cover and cook and LOW for 7 hours without opening the lid during the cooking time.
Cut the Velveeta and cream cheese into cubes, add to the soup in the slow cooker. Stir to get the cubes into the soup (they won't melt straight away).
Cover and cook for one more hour on low.
Stir until the cheeses are blended into the soup. Serve and enjoy!

I made this last week and we all loved it! It was better than I thought it would be. I did make a couple changes though. I added minced garlic instead of the garlic salt and added an extra 1/2 block of cream cheese (I had some leftover and thought I'd get rid of it) to the mix. I also used Velveeta Shreds instead of the block of Velveeta and it worked like a charm! I think the next time I make it, I'll add corn and peas to it too cause we love our veggies in soup in our house.
I will definitely be making this again. Need a good soup to keep us warm through the long Minnesota winter and this is definitely a keeper!! 😃

Try as I might, I can't seem to screw up one of your recipes. I like bacon and tomato on my cheeseburgers so I added them to the soup...it turned out great!

I don't recommend freezing potatoes, they change in the freezer and it's not a good change.

What cheese substitute would you use in the UK? Don’t think you get Velveeta here. Thanks.
I researched and can't find anything like it. You could shred some cheddar and stir that in, do it slowly though so it won't clump.

@@TheMagicalSlowCookerblock cheese shredded is better than pre shredded cheese because bagged shredded cheese has an additive to avoid clumping in the bag that doesn't allow for a proper melting. I don't like velveta due to its high processing. So I am going to play with various cheese types.
Please I hope someone can answer this like soon. I'm literally making this now and have family coming over later for a small housewarming. I didn't pay attention that it says 8 hours on low. I don't have that much time. Will it still turn out the same 4 hours on high? Thank you!
Kevin M yes! That will do fine. Keep the lid on the entire time or the potatoes won’t soften.

what can you substitute for the carrots? not a carrot lover
You could leave them out or add more celery. I think anything else will change the flavor of the soup.
Cant you cook it on high for 3 or 4 hours?
Yes, that will work fine. Probably 4 hours, potatoes always take a while.
Thank you for getting back to me. Maybe what I will do is stuck the potatoes into the microwave for 3 or 4 min before I put them into the crockpot. Recipe looks delicious and cant wait to try it. Please post a lot more videos on recipes for crockpots. I suck as a cook but your videos helped me out!

I've never had luck with potatoes or dairy in the freezer.

I would leave out the herbs as when my cheeseburger soup is done I add ketchup mustard and dill relish. So the herbs would just get in the way of the real cheeseburger flavor. I'm going to use this recipe and just leave out the herbs. :-)
Why would you use chicken broth if you are using beef. Use beef broth.
You can if you want. In some recipes beef broth tastes like a tin can. This is one of them.
