I've made several different variations of wraps over the years with infinite combinations of any or all of these ingredients - egg whites, whole eggs, cauliflower, nutritional yeast, xanthan gum, guar gum, psyllium husk, baking powder, cream of tartar, coconut flour, almond flour, oat fiber..... You name it, I've probably tried it. Some of those variations were massive failures. Some were good or more acceptable than others, but none had the right balance of good flavor AND good texture to make them a staple for me. I'm happy to say, beef gelatin is the magic ingredient! I can't believe I never saw a variation with it! I added a pinch of salt, but no other modifications! Thank you! ❤️

Have you tried experimenting with 00Flavors (OOFlavors) ? I don't have the patience and have been hoping one of you who share recipes online will do it. They have wheat bread and corn bread and even corn tortilla flavors. Wondering if this could satisfy the longing for the real thing.
I wanted to share.....I made your egg white wraps (the version using egg white powder instead of fresh egg whites) and cooked the batter in a slightly greased non-stick skillet. I was looking for a crispy round to make a quick pizza crust so I MICROWAVED THE INDIVIDUAL WRAPS on a greased, microwave-safe plate (I have Corelle plates) for anywhere between 3 and 5 minutes, until the rounds were very dry and crisp. Amazing results! This takes a lot less time than having an oven dry and crisp them (like you used to make your crackers with these ingredients.)

I added allulose and butter powder along with a pinch of salt. They turned out great! Nice and brown. A little heavier than just the egg whites and held up great! I make these on a regular basis and use them for lots of things. Great in the microwave with a piece of cheese just long enough for the cheese to melt then roll them up. Nilli ~ These are a PERFECT replacement for traditional manicotti shells! They feel the same and hold together better than the traditional wheat flour version. They cook up tender (just like traditional manicotti) and I am SO happy to be able to make this traditional Italian dish and have the flavor spot-on perfect! I mixed them in my Blendjet for perfect frothy consistency. I did cook on a griddle, which is easy, but the sizes come out a little different. Next time I may try a nonstick pan (brushed in oil of course) so they're all uniform in size. I think manicotti is the best application for these because they are fairly flavorless otherwise. I'm not a sweet-crepe person - yet. Thanks so much! I think this will make great carnivore pasta as well. My mind is full of applications for this mix and they couldn't be easier! Thanks again!💝

awesome, I make mine without any gelatin, just egg yolk to 4 egg whites, and some salt. Flexible, not breaking at all, yummy. My fillings are : ground beef and yolk nest, bacon and thick cream and camembert and ground beef :)
I tried it a non stick pan and it stuck. tried on my griddle and it worked beautifully. Adding a pinch of salt makes the savory ones so much better, or a touch of sweetner for use in a dessert. i used carton egg whites. i think letting the gelatin absorb the liquid a bit before pouring works best. I tried a double batch and the end of the batter was getting too thick by the time I was ready to pour the final wraps. I ate them as I cooked. Dont judge me 😂😂
Hi there have tried carton eggwhites as well, and they were a fail :( was wondering if u had them at room temp? Are they "whippable" eggwhites? M thinking these might have been the problem as ours was straight out the fridge and they one and only kind we get here in NZ is not suitable for whipping :(
You are a treasure. I made these yesterday. They were great but my mind turned to how I could make them more flour like and added a tablespoon of lupina flour, adjusting the water accordingly. I don't know how you feel about that ingredient but it really made those tortilla texture very much more like a flour tortilla. One only has 1/3 to 1/4 of a tablespoon of the lupina flour and I can live with that. THANK YOU!

Finally! This is perfect for me. I eat 4-6 egg yolks (with 2/3 C cream and 2-3 TBSP collagen powder whipped in a blender) every morning for my carnivore "fat bomb" breakfast. I have SO MANY whites in my freezer. Haven't been able to find a truly carnivore recipe for them until now. This is truly fantastic. If anyone is interested, you can make it more tasty (but not carnivore) if you add some sweetener and an extract of your choice. (This is how I convince all my family and friends to try it. They fall in love immediately. Even got the grandkids on board. As long as it's whipped in a blender, it just has the texture of thick cream.) Just watch the ingredients list on the cream. Even most of the 'organic' stuff has carrageenan in it and that rips apart the guts of most people.
I’ve been using your awesome crepe recipe and today, I discovered that I could use Maria Emmerich’s recipe for “apple” pie (using zuchinni)…just the base (no topping) as a wonderful filling for your crepes…I topped the stuffed crepes with a touch of keto syrup…soooo yummy!
I made these today. I discovered a few things and will be tweaking them. You need to oil the pan after each addition. I tripled the recipe because I was feeding a family. For my first attempt, they turned out quite nice.
I’m so glad you’re doing this recipe. I tried the egglife wraps and couldn’t eat them. They were so thin they ripped and I wasn’t a fan of the taste and they’re pretty pricey. These look 😊

I was watching with slitted eyes thinking, " yeah that looks great , but I bet they feel m o i s t... then you mention the acacia fiber taking up the moisture and my eyes popped open! Hehehe. So I don't have any non stuck griddles or skillets. I do have cast iron griddles and I learned a neat trick: you can pan fry something in a skillet by putting a parchment round down first and oiling it and it keeps it non stick! Just thought I'd share that for the rest of us non-stick cookware challenged folks out there. Since these remain moist, they might make an okay enchilada, since that is a saucy dish anyway, right?
Thanks for your superb recipes. I just made some of these and I discovered if you want browning similar to your power flour crepes all you need to do is add a little allulose. I was making cinnamon-erythritol treat crapes and WOW they were amazing. One turned out kind of crispy and tasted just like my guilty pleasure of yore; Cinnamon Toast Crunch. I swear one could make a carnivore clone of Cinnamon Toast Crunch by mixing egg whites, gelatin, cinnamon, allulose, spreading it rather thin and cooking them until they are crispy.
I just made these with just the egg whites and gelatin, a little salt. I added corn tortilla flavor drops from one on one and it tastes very reminiscent of a corn tortilla.
Hi! I made 4 small tortilla/crepes/wraps in my dash griddle this morning. They came out perfect! I used them as tortillas for breakfast tacos. I’ve tried making them on top of the stove and wasn’t thrilled with my outcome, but had this moment last night where I thought about my seldom used dash mini griddle. I use to use low carb wraps and miss them but don't want to eat them anymore. I recently tried egg life wraps and like them but not the expense. I tried your eggwhite powder version wraps the day you posted this and have had them every single day since. They are BETTER than egg life wraps in my opinion! These where amazing! Best keto crepe/pancake recipe I've ever tried! Seriously. I've never liked any of the other keto pancake recipes. Added some Lakanto's monk fruit sweetener. I bet you could serve this to non keto people and they wouldn't even notice. Also tried the one batch with the ew powder, and it was also good. A bit more stiff, and doesn't brown unless you add a bit of allulose-but the taste was good. I prefer the fresh eggs, though-the flavor was just a bit more fresh.
I was getting tired of cinnamon sprinkling mix, so I tried subbing out allspice. Allspice is a delicious flavor, more like cloves. I do not know the health benefit or the carbs, I just like it for a change from cinnamon.
I always have made creoes and when i started cornivor i tried making them with the beef gelatin stuff and they were ok. I make them now with eggs and i use the yokes too and heavy whipping cream and sometimes a little water and i add some whey protein powder that is birthdsy cake flavor and i roll up and put some melted butter and sprinkle a bit of cinnamon on them.....or instead of protein powder i will use vanilla extract.
I finally got to make these. I had a couple of packages of Egg Life to use up. They were so easy to make and tasted just like the Egg Life. I'm looking forward to trying to mix with some flavors the next time. Thank you again for all of your experimenting!!! 🥰

I used 3 tbsp of egg white powder half a cup plus 1 tbsp of water teaspoon of vanilla extract 1/2 teaspoon of cinnamon. Poured Miss Butterworth low calorie syrup on them. Amazing taste not eggy.
in the AIP elimination diet, beef gelatin is used to replace eggs in baking (on aip eggs are not allowed because they can give auto immuun reactions in the body) they call it "gelatin eggs" (1 tbsp gelatin to 3 tbsp water)
Seeing the "Good Good" jam in your video reminded me to tell everyone about the BEST keto jam EVER!! I'm so excited about it. The company is "Nature's Hollow" based in Utah. They offer ketchup, several jam flavors, BBQ sauce, a keto maple syrup (& Raspberry) and a honey substitute!! The only downside to PET OWNERS (I am not) is that the sweetener is xilitol. But man! The egg yolks make excellent egg salad. If you are fighting insulin resistance don't eat egg the whites without a fat. It will cause insulin to do slight rise. With the yolk or a suitable animal fat on it, it causes no insulin rise. Go figure. Just my little bit of learning imparted. Trying your recipe now! You have great ones. I'm going to try folding them for pot stickers, dumplings. Also in egg drop soup I will try the yolks!

Love making these and I started doing this after seeing Maria Emmerach do something similar to make Noodles…But I used my fry pan as I only made a small amount. I then just thought how about adding in one whole egg and then two egg whites with 1Tbls of Gelatine. It worked and makes yum egg noodles for stir fry etc…I was thinking when you showed the browned version with your Power Flour… why not just add a tiny amount of your Allulose to the origin two ingredient mix? It will help colour them with out the trouble of making the Power flour. We don’t get Allulose in Australia so I can not try this option. I didn’t like so much gelatine in my crepes so I cut it to 1/2 and still works. Thanks again for your info and experiments and I am really enjoying watching your past vids as I have just found you. ❤

@@rus8884 mine were straight out of the fridge. Try another brand if possible. I hear there can be differences between brands.

Just watch the ingredients list on the cream. Even most of the 'organic' stuff has carrageenan in it and that rips apart the guts of most people.
I’ve been using your awesome crepe recipe and today, I discovered that I could use Maria Emmerich’s recipe for “apple” pie (using zuchinni)…just the base (no topping) as a wonderful filling for your crepes…I topped the stuffed crepes with a touch of keto syrup…soooo yummy!

I made these today. I discovered a few things and will be tweaking them. You need to oil the pan after each addition. I tripled the recipe because I was feeding a family. For my first attempt, they turned out quite nice.
I’m so glad you’re doing this recipe. I tried the egglife wraps and couldn’t eat them. They were so thin they ripped and I wasn’t a fan of the taste and they’re pretty pricey. These look 😊

So I don't have any non stuck griddles or skillets. I do have cast iron griddles and I learned a neat trick: you can pan fry something in a skillet by putting a parchment round down first and oiling it and it keeps it non stick! Just thought I'd share that for the rest of us non-stick cookware challenged folks out there.
Since these remain moist, they might make an okay enchilada, since that is a saucy dish anyway, right?

I just made some of these and I discovered if you want browning similar to your power flour crepes all you need to do is add a little allulose.
I was making cinnamon-erythritol treat crapes and WOW they were amazing. One turned out kind of crispy and tasted just like my guilty pleasure of yore; Cinnamon Toast Crunch. I swear one could make a carnivore clone of Cinnamon Toast Crunch by mixing egg whites, gelatin, cinnamon, allulose, spreading it rather thin and cooking them until they are crispy.
I just made these with just the egg whites and gelatin, a little salt. I added corn tortilla flavor drops from one on one and it tastes very reminiscent of a corn tortilla.
Hi! I made 4 small tortilla/crepes/wraps in my dash griddle this morning. They came out perfect! I used them as tortillas for breakfast tacos. I’ve tried making them on top of the stove and wasn’t thrilled with my outcome, but had this moment last night where I thought about my seldom used dash mini griddle. I used liquid egg whites this time and next time I’ll use the egg white protein powder. Thanks for this recipe!

So I made a savory batch with a bit of salt, pepper, onion powder, garlic granules and Redmond Season Salt. I cannot tell you how easy and delicious these things are !!!! WINNING.

SO many Thumbs-up!!! I made a double batch of these tonight and then filled them with a sweet cream cheese/cottage cheese/egg mixture then fried them in butter and topped them with whipped cream and fresh raspberry sauce - VOILA Cheese Blintzes!! Even Hubs loved them!

I use to use low carb wraps and miss them but don't want to eat them anymore. I recently tried egg life wraps and like them but not the expense. I tried your eggwhite powder version wraps the day you posted this and have had them every single day since. They are BETTER than egg life wraps in my opinion! I love them for turkey, bacon, avocado, bbq mayo wraps. So So So good. Thank you, thank you, thank you for doing all the creative experiments you do and coming up with these! These are helping me on my health journey to eat cleaner keto. I appreciate all you do for us! I made these today in a cast iron pan. I need to work on getting them thinner, but the batter is no fuss and very forgiving. Mine aren’t as beautiful as Nili’s but they were yummy with cinnamon “sugar”. I made a triple batch! Thanks again, Nili for all of your hard work!

If you use tallow to brush the pan you get a nice golden colour.

Love the gelatin addition! I’ve been using the ProFlo in my egg wraps but don’t always have it on hand. Gelatin will be my next attempt!

These where amazing! Best keto crepe/pancake recipe I've ever tried! Seriously. I've never liked any of the other keto pancake recipes. Added some Lakanto's monk fruit sweetener. I bet you could serve this to non keto people and they wouldn't even notice.
Also tried the one batch with the ew powder, and it was also good. A bit more stiff, and doesn't brown unless you add a bit of allulose-but the taste was good. I prefer the fresh eggs, though-the flavor was just a bit more fresh.
would the ones with ew powder make a nice " noodle" for keto lasagne, being a bit more stiff?

I was getting tired of cinnamon sprinkling mix, so I tried subbing out allspice. Allspice is a delicious flavor, more like cloves. I do not know the health benefit or the carbs, I just like it for a change from cinnamon.
I always have made creoes and when i started cornivor i tried making them with the beef gelatin stuff and they were ok. I make them now with eggs and i use the yokes too and heavy whipping cream and sometimes a little water and i add some whey protein powder that is birthdsy cake flavor and i roll up and put some melted butter and sprinkle a bit of cinnamon on them.....or instead of protein powder i will use vanilla extract.

I used 3 tbsp of egg white powder half a cup plus 1 tbsp of water teaspoon of vanilla extract 1/2 teaspoon of cinnamon. Poured Miss Butterworth low calorie syrup on them. Amazing taste not eggy.

in the AIP elimination diet, beef gelatin is used to replace eggs in baking (on aip eggs are not allowed because they can give auto immuun reactions in the body) they call it "gelatin eggs" (1 tbsp gelatin to 3 tbsp water)

Seeing the "Good Good" jam in your video reminded me to tell everyone about the BEST keto jam EVER!! I'm so excited about it. The company is "Nature's Hollow" based in Utah. They offer ketchup, several jam flavors, BBQ sauce, a keto maple syrup (& Raspberry) and a honey substitute!! The only downside to PET OWNERS (I am not) is that the sweetener is xilitol.
But man! So delicious and my Good Good jam is sitting in my pantry untouched now that I've tried this new version!! 😊

The egg yolks make excellent egg salad. If you are fighting insulin resistance don't eat egg the whites without a fat. It will cause insulin to do slight rise. With the yolk or a suitable animal fat on it, it causes no insulin rise. Go figure. Just my little bit of learning imparted. Trying your recipe now! You have great ones. I'm going to try folding them for pot stickers, dumplings. Also in egg drop soup I will try the yolks!

Love making these and I started doing this after seeing Maria Emmerach do something similar to make Noodles…But I used my fry pan as I only made a small amount. I then just thought how about adding in one whole egg and then two egg whites with 1Tbls of Gelatine. It worked and makes yum egg noodles for stir fry etc…I was thinking when you showed the browned version with your Power Flour… why not just add a tiny amount of your Allulose to the origin two ingredient mix? It will help colour them with out the trouble of making the Power flour. We don’t get Allulose in Australia so I can not try this option. I didn’t like so much gelatine in my crepes so I cut it to 1/2 and still works. Thanks again for your info and experiments and I am really enjoying watching your past vids as I have just found you. ❤
