    SORTEDfood is the only reason I have a chance at passing my food GCSE. I have learnt lots of tips, methods for different dishes, food techniques, and different uses for equipment and ingredients because of this channel.

    The swiss roll looks good! What I am even more impressed with is how Barry's cooking skills have improved over time. He seems a LOT more confident in his abilities. Mike has also improved, but Barry seems to have a calmness about him that's unique. I look forward to seeing his further progression, as the journey continues.

    Ben was the kind of kid in school that never forgot his food tech ingredients and everything he made turned out perfect. Unlike me in year 8 with my half burnt/half raw garlic bread.

    I usually use redcurrant for the added tanginess. Also a fun thing you can do with it in summer is freeze it, then get it out of the freezer a few minutes before serving. The sponge will have defrosted and will be very soft while the cream will still be hardened. It's a pretty refreshing desert this way.

    Tip to seperot egg white for egg yolk .use a press the booltel and put it on it and let it go .

    its mango season here and I have an abundance of mangoes, this is a great way to use them up! could you make a recipe with lychees? I may have gotten a few...dozen...

    I've actually never had this homemade, but I did have store bought ones several times growing up in the Philippines. The bakery just down the street from my house sold mango Swiss roll cakes. Oh course, having lived in the Philippines, I'm a pretty gigantic mango snob, so I'll just hint that Philippine mangoes are way better than the ones you used in this recipe! ;)

    instead of mango can i use other fruit? and can i use a plain flour instead of self rising flour and add baking soda ?

    Can you use mango juice rather than whole mangos? For some reason I don't like mango fruit but love mango juice... Don't as me why. Also, I'd prefer this without cream inside, as I'd add it to the slices on the plate. It also makes it easier to roll back up as the filling is thinner.

    what else can you use the mango custard for? can you just eat it as it is??

      You could just spread jam on it - then it is a simple "Biskuitrollade", but it tastes rather dry, I don't like it very much. Whipped cream + strawberries is also a classic, you could also fill it with custard, a chocolate cream or anything else you can think of - take a look at www.ichkoche.at/biskuitroulade-rezepte/

    It's not fatless since it contains egg yolks. And the filling will keep it moist (store in the fridge).

    if you add a little bit of oil/butter into the cake batter, the cake will be more easy to roll without pre-rolling it with the tea towel.

    Often times the fruit purees in desserts call for citrus juices. Is there any way to not use citrus juice in it? I've got a really bad allergy to it but I want to try and make this!!! Same goes for the Strawberry Mousse recipe you have.

      Feel the texture of the fruit, shouldn't be too soft or too hard, of course this depends on the fruit you're looking for, also check the color since it tells you the ripeness of the fruit. Also feel for bruises, those really soft parts in an area on the fruits, you don't want those

      from wiki:
      "Corn starch ('cornflour' in the UK), the white, powdered starch of the maize grain". You could also add some softened gelatin foil, if you want your custard to be more ... jelly; although it might become a bit harder to spread

      use plain flour and add a teaspoon of baking powder (not baking soda). It's actually the raising agent in self-raising flour

    Hey guys! My sister is heavily pregnant and (like 8% of pregnant women) has been diagnosed with Gestational Diabetes. She loves sweet things so much, but unfortunately due to the stringent carb restrictions (snack 15g, meal 30g) making her delicious desserts has been almost impossible! :(
    Any chance you could make a video for a delicious sweet GD-friendly dessert to save her from her cravings? I know it would take away her pre-baby blues like nothing else! :)

    selfrising flour is juat flour with rising agent like baking soda? we don't have smth like this in my country

      Yup you can make your own, Just add 2 teaspoons of baking powder for each 150g or 1 cup plain flour. Sift the flour and baking powder together before using it.

      If we're thinking of the same kind of chili, that might not go so well with the cream and the sweetness of the bread... You can always try, though!
      If you want to do it, something that could (maybe) work is some sort of mango-chipotle jam (or some other smoky pepper) and cream cheese softened with butter. I don't know how you'd solve for this bread's sweetness, though.
