The swiss roll looks good! What I am even more impressed with is how Barry's cooking skills have improved over time. He seems a LOT more confident in his abilities. Mike has also improved, but Barry seems to have a calmness about him that's unique. I look forward to seeing his further progression, as the journey continues.

I usually use redcurrant for the added tanginess. Also a fun thing you can do with it in summer is freeze it, then get it out of the freezer a few minutes before serving. The sponge will have defrosted and will be very soft while the cream will still be hardened. It's a pretty refreshing desert this way.

Oh course, having lived in the Philippines, I'm a pretty gigantic mango snob, so I'll just hint that Philippine mangoes are way better than the ones you used in this recipe! ;) Looks great, though! :)
Can you use mango juice rather than whole mangos? For some reason I don't like mango fruit but love mango juice... Don't as me why. Also, I'd prefer this without cream inside, as I'd add it to the slices on the plate. It also makes it easier to roll back up as the filling is thinner.
You could just spread jam on it - then it is a simple "Biskuitrollade", but it tastes rather dry, I don't like it very much. Often times the fruit purees in desserts call for citrus juices. Is there any way to not use citrus juice in it? I've got a really bad allergy to it but I want to try and make this!!! Same goes for the Strawberry Mousse recipe you have.
Feel the texture of the fruit, shouldn't be too soft or too hard, of course this depends on the fruit you're looking for, also check the color since it tells you the ripeness of the fruit. Also feel for bruises, those really soft parts in an area on the fruits, you don't want those

She loves sweet things so much, but unfortunately due to the stringent carb restrictions (snack 15g, meal 30g) making her delicious desserts has been almost impossible! :( Any chance you could make a video for a delicious sweet GD-friendly dessert to save her from her cravings? I know it would take away her pre-baby blues like nothing else! :)
Yup you can make your own, Just add 2 teaspoons of baking powder for each 150g or 1 cup plain flour. Sift the flour and baking powder together before using it.
