- Thank you for watching my Chile Colorado Sausage video. On this video, I made up one of my all time favorite Mexican dishes my Grandmother used to make and turned it into a sausage. Traditional Chile Colorado is slow cooked pork or beef in a red chile sauce until nice and tender. I took those Mexican flavors and packed it into a sausage. WOW! Joe, you have out done yourself. The redish color for the Chile Colorado slurry really is vibrant and the sausage looks incredible. Love the potato twist ...a complete meal in a casing.
Some Sausage has bread crumbs added. Potatoes makes as much sense to me!

I’m going to make these (minus the potatoes), the cheddar jalapeño and originals. I have a good amt of brisket in the freeze and I finally figured out how to use 1-2

Joe I really enjoyed that. We make sausage every January with pork and venison. We make enough for 4 families and it's a bunch of people drinking beer and doing their individual job.
I have never thought of adding a solution like you made with the peppers to our sausage but I might just try this recipe on my own this fall.

Beautiful brisket and tailings. Wow. What a beautiful recipe. Oh yes, red chile sauce. You've got a professional set up there, mixer, grinder etc. When you got the stuffer ready.....you are a sausage maker king! Beautiful smoker. No worries...those grill marks are fine. No need to wipe down. Good lord, I need some now. A good snap on the casing is always a sign of top notch sausages. Excellent cooked sausage cut through. Wow. Yeah, I heard that snap when you bit into that half. Loved this! Thanks for sharing! I subbed.
