I can tell you how to make these so good you will be addicted all over again. 1 pound of sausage (I mix mild with hot, but that is a lot of trouble because you have to buy both so you don't have to), 10oz of extra sharp cheese, and 2 and a half cups of self rising flour( do not use Bisquick). Put the flour in a huge bowl and pour milk into it an stir(keep going until it is soaking wet, then throw the shredded cheese and pinch the sausage up and throw it in. With both hands get in there and mix it together until you get tired of doing it. Smash it together and even make it ooze out of your fingers over and over. Ok this is the most important part. Put it in a glass dish or casserole dish and cover with saran wrap and put it into the fridge. DO NOT COOK until the next DAY! I don't know why, but it never tastes right unless you let it sit in the fridge overnight. The next morning preheat 450 degree and roll them up into balls. Cook for 16 mins. You may need to grease the pan if it isn't non stick. You will thank me if you follow those directions. If you can get Tennessee Pride Sausage use that. If you can not use the most expensive kind in your area. DO NOT USE CHEAP sausage. It makes a huge difference too.
My mom used to make these. Always a hit with my friends and me in high school and one of my friends started callng them "nukies" which has stuck. Lost the recipe when she passed several years ago. Saw this recipe and your comment and now I'm going to go home, cry, and make some nukies...cheers to great moms and Chef John.

I made these and my husband ( who is usually very picky about any new dish I try ) loved them and even suggested I make them for friends who came over for dinner the other night. And THEY loved them. It's really a very uncomplicated appetizer, but it's true.... all the ingredients came together to just make a tasty meatball. Thank you chef John! You saved the day! 👩🏼🍳

Omg I'm so glad you did a vid of this particular delight! When I was about 5-6 years old I made myself sick eating too much of these at an Xmas fam gathering. They were so delectable my young self couldn't resist.
Many years later as a young wife in Germany I attempted to recreate these and the results were subpar, to say the least. And as years have gone on I've forgotten about sausage BALLS but now I know what I'm making tonight. Although it MUST be jimmy dean sage sausage. That's a must. Nostalgic af

My grandmother makes these every christmas and omg they are amazing. Her's do have a few minor differences, but that's the beauty of cooking! :)
For me, this is one of the best recipes on a channel of a lot of good recipes no clue as to why (other than the broiling) by far the most underused setting of anything ever made. Beacuse it is the best setting if you can take out a tray and wait for five minutes then put it back in the oven,if you cant we likely have a group that called "I hate perfection anonymous" but if you can resist enjoy perfection.

Chef John...........dreamy words.....once again my marriage offer stands. Made these to ‘test the night before thanksgiving’. Then, After we finished ALL of them I immediately made two more batches (was serving 16 ) for thanksgiving . I barely got them on the table before they disappeared, and was delighted by all the praise. It was as if I won the prize for best appetizer .... I was the Monty Hall of my spicy sausage meatball. I am 64, he's 55, and we have cooked as well for $$ in our lives, we prefer the cooking to the painting & enjoy your presentations. no need to. he always says that less is more. If you ever find a fancy tool to do a stupidly uncommon task, just don't buy it. if you think you're gonna use it a lot, then buy it. Chef john doesn't like washing things, so easy to wash = ok.
No special pots/pans/bowls/tools are needed to cook. You can do anything with one paring, chef/santoku and bread knives. Any other knife is just a waste.
that's a must for me.. I'm always like where did he get that baking sheet OE the metal tray he uses for drying... I can't make a lost on my own but I think a must have is cast iron pots and pans so they can be tossed in the oven

I have an oroley ceramic pan that is nonstick and oven safe (tested), so no need for cast iron, specially if you have a weak stove which will hardly heat the cast iron pot/pan. You have to get what you can use and what you want to use. you see something useful... BAM! buy it (if you can). Just think if it is a proper tool or a one time use stupid buyer's remorse thing

I have always just done the recipe on the bisquick box when I make these once every four years or so. Ha! Love your other takes on these things. Made your cheez-its and they didn't last a day, they were so great. Looking forward to trying your take on these amazing "imbibing-worthy" snacks.

When I make these I put all ingredients into my Kitchen Aid Stand mixer bowl and stir it that way. It only takes a couple of minutes and it is mixed perfect. No hand mixing. Try it. It works.

Question: I'm guessing there's no reason these can't be prepared ahead and frozen for later use? I know the bottom may not be has hard, but overall would they maintain integrity?
We like to prepare batches of things and then vacuum seal them for freezing. These I would probably freeze first on a tray and then vacuum seal after the fact so they don't get crushed. These would be great to have on hand for impromptu gatherings.
