    Dear slower people from Philly: Did you think I was trying to create an authentic cheesesteak here? This is a bite-sized appetizer, and not an actual sandwich. Just wanted to clear that up. I know it's pretty confusing. Also, this is as close as your city will get to a Super Bowl in a very long time.

      Came to the comments to give respect for the provolone cheese wiz, seems like other Philadelphians, unlike myself, are too hot and bothered about their cheese steaks. I'm with you except that last part, ouch!

      The only thing that struck me odd was the steak, it's generally way creepier looking and floppy, like corned beef almost. I don't actually know the process. You should make something with scrapple so the people who think a cheesesteak is gross can really have something to barf over.

    I was born and raised in the Philadelphia area, and I LOVE the redemption of the horrifying cheese whiz with provolone -- this is a fantastic idea, and looks yummy!

    Hey thanks for this recipe! I made it for my girlfriends family on Super Bowl Sunday and they were quite impressed!!
    I had some leftover ingredients and ended up making the best grilled cheese sandwich EVER. If anyone has leftover meat/relish mix, definitely make one for yourself. It's really good if you use sourdough bread.

    told some people about this site,they considered themselves really bad cooks,after watching chef john,they got confidence to learn . they,in the past few months,have taken the baton and impressed folks with their new found knowledge,in fact they eat healthy food and enjoy what they now do,they were intimidated by the cooks on tv and found chef john to be easy going,and easy going,funny how a person can make one of the fundementals of life so pleasureable.kudos chef john

    I feel like Chef John just stays awake for hours thinking of funny puns that go along with his videos. He drives himself mad over time and drinks coffee to keep him self up. Awesome vid.

    Looks so yummy. Being the west Philly girl that I am I would have loved to see your spin on ketchup dipping sauce to go with this. Traditional Philly Cheesestakes usually have a condiment on them because between the bread, cheese and meat it could get a little dry sometimes lol but nevertheless its always delicious. Anyway great recipe. Gunna try this.

    After looking at a number of Philly Cheesesteak demos on RUclips I decided to try Mini Philly Cheese Steaks. Delicious!!! The provolone cheese whiz is an improvement over the yellow stuff. The pepper relish adds a lot of heat too. Thanks Chef !

    Listen up, I made these, well a version of these. I used crusty farmhouse bread instead of that French baguette nonsense, couldn't get Provalone in England (I have to admit I didn't try very hard) so I used extra mature Cheddar, a mans cheese and I put melted butter on the bottom instead of Olive Oil. I did use skirt though and they were epic.

    His presentation is very southing.

    If you're ever in Philly and want a cheesesteak with a twist, lots of restaurants have cheesesteak eggrolls and omg they're so GOOD! I believe The Continental has them (they serve their food tapas style).

    As always,,,,another fine idea,,,They look quite tastey,,,Back in the day growing up in philly i ate a lot of steaks and Hoagies,,,but back then,,,flat iron steak,,,skirt steak was 10 cents a ton,,,today it cost more then a ribeye steak ,,But for an old Philly boy,,,,,,You can take that slop they call cheese-wiz and stick it That was a South Philly icon I lived in "Fishtown"

    I made this today with rib eye and it turned out very good. Make sure you pile on the meat, though, to ensure that the big beefy taste comes through. A few of the pieces where I was stingy with the meat mixture weren't quite as good.

    Chef John, not all of us are asshats when it comes to cheesesteaks. Love your recipes, and this is a pretty good take. I'd change the provolone wiz to a white american cheese (since this was my favorite since childhood on my cheesesteak) for my own preference, but otherwise this would make for an awesome party appetizer to go with your sriracha wings. Had those the other day, BTW, and they're awesome.

    Hi chef! Could you make crispy chilli beef sometime please? I love it but my local Chinese isn't very good at it. Very little or no chilli & very thin/stringy beef strips coated in a luminous orange syrup. I want to learn how to make my own!
