Its not heavy food despite 30+ items on a menu. So iam not full becoz i also have a chance to visit a Kerelan household in my town. They have a resturant here and i am near to their resturant where i live. They invited me in their home. It was a godly pleasure.

Thank you Ivana for appreciating our Ona-sadya. Wish I could be with you when you had your Sadya. I could explain about these dishes to you. Ideally, you should start with Rice with Dal and Ghee. That will reduce your hunger pangs (Dal is a type of pulse, whose protein can cause allergy to some people. Adding ghee will cancel that effect. )The serving location of ghee was wrong. Usually Ghee is poured on the dal, or near it). The chutneys, that you were referring to, have specific names. The spicy mango chutney (mango pickle) is called Maangaa-kkari (maanga means mango, Kari is Curry. We double some letters when we combine two words). The Tamarind chutney is called Mulakaa-ppachadi or Puli-Inchi, depending on the preparation (ingredients are slightly different, Mulak means green pepper, Puli is Tamarind, Inchi is Ginger, Pachadi is a dish made with Mustard seeds among other ingredients). One of the yellow sidedishes is Kaalan. Another yellow dish shown is Pineapple Pachadi. The white one with Lobia is called Olan. The sweet banana chips is called Sharkara-varatti or Sharkkara-Upperi (Sharkara is Jaggery). The salted chips is called Varutha-upperi (Varuthupperi, when combined). The desserts are two types of Paayasam.

It was rice and parippu(dhaal) curry and spoon of ghee first, once you finish the parippu and rice mix portion, you either ask more rice with sambar or sambar to start the second part. Well, these days they don't keep the right way I think.

Dal with Ghee is how you start the Sadya....followed by Sambar...Rasam...buttermilk ... wrap up with Desert and end it with butter milk (which I don't because I like to savor the taste of desert)

ghee must go with the dhaal and rice, pappad with payasam(the one served in cups), the ginger is actually a curry. white one is olan, yellow with curd and cocunut is called a kaalan, the one with pineapple is pinapple pachadi, and so on.

You can also find Sambhar variety in South india.. like in Odisha Idli served with different way of Sambhar, Andhra Pradesh had new version of Sambhar.
You need more Dal, for rice.
Try rice dal and buttermilk mix with it... You'll love it

I agree with you on mixing curries. What I usually do is taste the curry individually with rice to know each one's taste and then try different combinations. For last onam I even mixed banana chips with rice🤭. I'm also not a fan of payasam but I like to drink it from banana leaf because flavours from the curries will also get mixed. Last onam we tried mixing ada pradhaman with inchi curry(tamarind chutney for you) and it was so good. So experiment with each and every combination.

I suggest Don't eat at hotels always again. Take a house. Have a cook and maid who can cook all desi food for u, rice, roti, dosa, different kind of vegetables, it's much lighter than the hotels and tastes wholesome. U should try visiting Odisha too for best vegetarian like baigan bharta, Aloo chakta, santula, dalma, Puri jagannath abhada at the temple, Malai rabidi, chenna poda, chenna jalebi etc.... and also sea food.
Similarly u should visit rajasthan and Gujarat for different kind of food.
