How to Make Dango (Japanese Sweet Dumplings: Mitarashi and Anko Red Bean Paste Recipe) | OCHIKERON

  • Dango is Japanese sweet dumplings.
    Three or four Dango are often served on a skewer, which we call Kushi Dango (串だんご).
    In this video, I will show you how to make Mitarashi Dango / みたらし団子 (Dango with sweet and savory soy sauce) and An Dango /あん団子 (Dango with red bean paste).

    How to Make Dango (Japanese Sweet Dumplings)
    Difficulty: Very Easy
    Time: 20min
    Number of servings: 4 (12 Dango)
    Ingredients:
    ((Dango))
    100g (3.5oz.) Shiratamako (lumpy glutinous rice flour)
    150g (5.3oz.) Kinugoshi-dofu (silken Tofu)
    1 tsp. sugar
    ((Mitarashi Sauce - sweet and savory soy sauce))
    50ml water
    1 tbsp. soy sauce
    1 tbsp. sugar
    1/2 tbsp. Katakuriko (potato starch)
    ((Anko - red bean paste))
    Tsubu-an (sweet Azuki red bean paste with skins)
    Directions:
    ((Dango))
    1. Put Shiratamako, sugar and lightly drained Kinugoshi-dofu in a bowl and knead the dough with your hand until smooth. Adjust the texture by adding more Shiratamako or water until the dough turns as soft as your earlobe.
    2. Divide the dough into 12 small pieces and roll into small balls.
    3. Bring a large pot of water to a boil. Gently drop the Dango in the boiling water. After a few minutes, Dango will float to the surface. Boil for another 1-2 minutes. Then remove from the boiling water and transfer into cold water. After a minute, drain well.
    4. Put 3 Dango on bamboo skewers. Pan fry the Dango on a teflon pan (or a lightly oiled pan) until sides are nice and brown.
    ((Mitarashi Sauce - sweet and savory sauce))
    1. Put all ingredients in a small sauce pan. Put on low heat, stir constantly, and cook until sauce thickens.
    2. Place Dango on a plate and coat with the sauce.
    ((Anko - red bean paste))
    1. Put Anko on top of Dango if you like.
    Best eaten while they are still warm :)

    I tried making this today and i was so worried because my family doesn’t like sweet food or mochi but everyone kept eating it i only got a chance to eat one 😂

    good question. actually maybe for few hours in the fridge. they get hard as time goes by... so i recommend eating them as soon as you make.

    thanx for making this ochikeron it brings back so many memories of when i was 5 about 6 years ago my dad used to always buy my dango then i would make him go back and by another box because they were so good i love the sweet soy sauce stuff on dango

    I'm happy to finally find an easy way of making dango! I don't live in japan anymore so its hard for me to find alot of the ingredients that one of my friends taught me. I look forward to making this for my husband!

    That earlobe comparison is actually a good one. It's similar to what bread dough should feel like after it's kneaded, except this is made from rice flour. Thanks for sharing this recipe. :)

    I love that I can work these into my diet. Last summer I started to get edema really bad & my doctor diagnosed me with lipidema & told me to go on a vegetarian diet (I had to go vegan for 2 weeks as a detox, not fun). I can eat fish & chicken, & every so often I'll cheat & eat red meat, but I love Japanese bento & I can fill it up with tons of tasty Japanese treats that are totally vegetarian! Arigatou gozaimasu! PS... Love your "thumbs up", totally cool.

      aybuke cengiz I know this is late, hahaha but you could always find stuff like that online. I get strange things I can't find in my American market online. :) We have tofu, but some of the other things we don't have.... :)

      Divalishizz just get random rice flour and use water if you can't use tofu, and corn starch instead of potato starch

    YUM!!! I'm 12 and I love Japanese food and, let me just say that this was the best thing I've made! I spent 30 minutes trying to get every measure right. It was so worth it though. My family and I enjoyed this tasty treat and, I want to thank you on behalf of my family! ^.^

      The dango themselves have little flavor, just very chewy...similar to the texture of the dumplings in chicken and dumplings (except more chewy). The mitarashi sauce just tastes like sweet soy sauce ( the starch used in the video doesn't change the flavor, only makes the sauce thick) 😀 lol I just made this today it's pretty good!!!

    Ahh I see where I went wrong when I tried to make this for class. I forgot the tofu and did not even think to add anything else in place of tofu. Thank you for the video I have put it in my favorite. ^_^ I will check out more of your videos as they seem awesome.
