I froze the anko paste I've made. My bean paste quickly became dry and crumbly after refreezing. I've made some mistake. Can you please tell me how to freeze the paste correctly? Maybe I need to add glucose syrup for moisture? I would be very grateful for your advice.
Hi, thank you for your comment! Good question! Wrap the bean paste tightly in plastic wrap. Place the wrapped bean paste in a ziplock bag and refrigerate. The key is to wrap it twice to prevent it from air contact. Hope it helps!

That's a good question! For the nerikiri filling, you can use the paste straight away. Just round into balls and wrap in a nerikiri dough! Thanks for asking! ❤️

Actually they are azuki beans, a red bean native to Japan. They are much smaller then kidney beans but you can use kidney beans in a pinch!

Yes you can. Sometimes canned azuki beans are already sweetened with sugar. In that case, additional sugar is not needed.
