We are Bruce and Brenda and are new to homesteading. We are in planting zone 8B and have a large-ish garden and laying chickens.
We are called Slapout Homestead because that's what the locals call our neighborhood. Our internet is so bad (how bad is it?), our internet is so bad that it takes 3 hours to upload a 6 minute video. I'm not kidding.
We are still building infrastructure in order to expand. I have been canning and preserving our harvests (some call this prepping). I call it insurance. We get bad weather here and sometimes the power goes out, and it would break my heart to lose everything in the freezer.
I started this RUclips channel in order to share what's happening on the homestead with my grandchildren, who live in different states and only visit once a year. I hope they enjoy what we're doing.
I also started this channel to share with YOU everything we've learned about chickens, gardening, and living frugally.

I can answer my own question. I made the eggplant and froze it as instructed in this video. I cooked it the next day in the air fryer with light spritz of olive oil, and it was crispy and delicious.

I have some tomatoes that are green. My neighbor said to put them in a paper bag to ripen, but it's been a week now and they look the same. How do you ripen yours ?
Does it get soggy after it’s frozen? I was told you couldn’t freeze egg plant because it would be soggy. I’m excited to find this video, thank you for making it. I will try it.
I think that’s why she made sure the salt pull out the moisture that they had it would help when they do freeze.
Do you rinse the salt off ? This is my first vegetable garden and I was wondering if you could tell me how to tell if my eggplant is ready to pick? Thanks
I don't rinse the salt off; it seems to be removed when patting the moisture off. I pick my eggplant when it first changes from super-shiny to matte purplish-black. Congratulations on your garden!
When you make eggplant parmesan, do you take it out of the freezer and fry it in oil ?
Yes, however, if there are ice crystals on the outside, let them thaw a few minutes and pat dry with paper towels before adding to the hot oil.
