  • Picked and fried up some eggplant for the freezer today. When the crops are ready everything else waits.

      They are just seeds that dropped from last years plants that were 1/2 that size. Never seen sunflowers turn into trees before. Must be all the sunshine this year. I had my share of the eggplant also. Thanks for watching.

    That beautiful round pink striped egg plant is Rosa Bianca instead of Ponderosa. You are right, must have been miss labeled. I learned to harvest them early when the seeds are tiny. As a beginning gardener I used to want to go for size, to the detriment of tenderness and quality. Great idea to bread them and have them already in the freezer.

      They are very sweet and creamy so it doesn't matter to me. I will definitely plant them again. It is the only way we could find to freeze them and in the middle of winter they still taste awesome. Thanks for watching.

    We love eggplant! Those look awesome. We upgraded to a VacMaster 112S from our food saver so we could seal liquids like soups without fouling the seals. Works perfect even for refrigerator instant pickles. Keep up the great work.

      Everything stays much better since we switched from ziplocks to the vacuum bags. Great for breaking up bulk packages from Costco also. Thanks for watching.

    My husband and I enjoy eggplant too!I use a potato peeler to peel mine.We fry them like you do and also really like eggplant lasagna.

    I didn't know that you can freeze them. That's great. Nothing goes to waste. I have the purple ones. It has 6 big semi big one.
    It also have lot of flowers. Here they grow all year. I also have a baby one that is black eggplant which I'm planning to
    put them together. Great video. Loved and Subbed.

      They freeze great, just fry them quickly so they don't overcook. If you can grow them year round it wouldn't pay to freeze them because fresh is always better. Thanks for watching.

    I love your videos and that you and your wife like to do it together. My husband and I do too. I also use my knife in the same way 😉. We are trying sweet corn and eggplants this coming season so learning how to preserve the eggplants.

      It makes everything easier when you work together. I gave up on corn because raccoons chewed it up on me a couple times. Eggplant stays great in the freezer. Thanks for watching.

    Beautiful sunflowers do you ever dry the seeds and eat them. Egg plants good yummy.

      I used to but lately I just let the birds have them. Hopefully some seeds falling from them will grow next years sunflowers. The eggplant are very good this year. Thanks for watching.

    In France, we always cut toward ourselves, that is the only way to use our thumb to control the thickness of the cut. I was very intrigued the first time I saw people cutting away, when I moved to Thailand.
    You don't use a knife the same way to peel an egg plant or to carve a stick!

      Many people will just cut down into the cutting board when peeling but that just wastes to much as the cut can't be controlled as you say. Thanks for watching.

    Pandora’s box! I believe you’ve discovered cross pollination. With all those industrious bees around and the eggplants close together, you've grown the start of one hybrid with another :-) I bet if you grew them again with a breathable covering over the flower you would harvest what it looks like on the seed packet picture.

      No, it was mixed up seed packaging. They had others report the same issue when I contacted them. Eggplant are self pollinating and usually don't Cross. Thanks for watching.

    Great video, those sunflowers are amazing. Why don't you leave the skin on the Eggplant ('Aubergine' here in the U.K.) when you cook them? Most of the nutrients are in the skin, although I suppose they could be a bit tough if the fruit is more mature.

    I need to get a new food saver! Love yours. I have to freeze such fragile foods then seal as mine doesn’t have the options that yours does. 🍆🍆🍆

      The pulse feature helps with fragile food and moist items like chicken that can cause a bad seal. We got this one at Costco a couple years ago. Thanks for watching.

    They look great. Did you cook them completely or partial? What type of oil did you use and do you know the temp?

      They are fully cooked and reheat perfectly in our air fryer. We just use canola but any cooking oil will work. I don't know the temp. The fryer has the perfect preset temp with no adjustment. They freeze great. Thanks for watching.

      I doubt it with the shape they developed. I think for eggplants it would be the next generation of seeds that would have different traits. Thanks for watching.

      No they were just seeds that fell from last years sunflowers that were only half the size. I have never seen sunflower plants turn into trees before. Thanks for watching.

    Is my family an exception, or does anyone else keep the skin on? Always have. Knew no different until I started watching recipes for eggplant. I personally don't taste anything nasty with the skin left on.

      They are bitter to me but don't bother my wife so I think everyone's taste buds are different. Just like tomato seeds in sauce ruin the flavor for me. Plus when you bread them to freeze the breading does not stick to the skin. Thanks for watching.

    I never peel eggplant, the way I slice them 1/3 in and the skin cooks. Did you know that do to my social security limiting my food budget, 3 slices of eggplant make a meal for me, with sauce, mushrooms, peppers and onion, if you put fresh lemon juice in the water eggplant doesn't oxidize. A meal for less than one dollar, 1 only eat 2 meals a day, and I have four cats to feed I spend about $150. a month, on blue buffalo grain free cat food, grain free treats $40.00, $30.00 Household and personal care.$60.00 Food, and $20.00 to stock up on sale items. All the vitamins are in the skin of the eggplant. I love your channel, I no longer garden, I have the room but I am 71, and bending is brutal.

      I don't like the bitterness of eggplant skin plus breading doesn't stick to it very good so we remove it. As we age including veggies in the diet is very important and having a garden is a great way to make high quality veggies affordable. A little extra work freezing and canning allows us to enjoy them year round. I am not a cat person but have 2 wonderful dogs and know having pets can get expensive. Thanks for watching
