    Not a fan of pickles but chunda has got me. We had a gujarati family as our neighbour who introduced me to chunda when i was a schoolgirl. I could never forget the taste & then started a lifelong romance with chunda even after i got married & went to stay at blr. If i get it from hansa aunty, nothing like it. Else i buy it. Only now am interested in making pickle & came across ur channel. Pretty easy & i'll put in my heart & soul to make it perfect. Thank you Alpa.

    How do we know chunda is ready?What's the reason to keep inside.?

      +Gayatri Desai you keep the chunda inside so the sugar gets time to blend well with the raw mango and you will know that the chunda is ready when the color will be a little different a little darker also once it's at room temperature after you bring it home from the sunlight you can take a little amount of the sugar in between your fingers and when you pull apart you will see threads( tar) of the sugar. For me the best way to know is to taste it 😊👍

    nice Alpa. i like your lehka. After adding salt,u don't remove water, may be it become s sour. how does we know , chhunda is ready? is it necessary to it in home, then in sunlight? we r in humid atmosphere, after some months ,white layer...fungus seen.what is the reason?

    Hello mam, just wanted to know that did you take 1 & a half kg of sugar granules or 1 & a half kg of powdered sugar because there is a difference as powdered sugar weighs less than the normal sugar?

      Yes dear it is but it's not the authentic way of making chunda, plus the taste will change quite a bit

    i am making chunda ...today is the third day i hv kept the chunda with the seeds indoor ..but i noticed my chunda frothing...is it due to fermentation...i wanted to know if its normal...or has my chunda gone bad

      +DEEPLINA SAHA mix it and taste it, usually if you keep stirring it a few times a day that won't happen, plus I hope you had made sure the vessel that you kept in was water free. Don't worry sometimes even the quality of the mangoes makes a difference but it doesn't seem that it's gone bad, unless you see fungus. Just stir it more often. Do taste and let me know

      U will have to get 1 more raw mango and Harte it and add little salt ( 1kg grated raw mango needs 1 1/2 tbsp salt) so u can add calculate accordingly. Once that raw mango oozes juice then add that juice to the chunda and keep it in the house. Once the sugar melts then keep it in the sunlight for 1 day. But keep mixing it in intervals

      Heat it on gas for a bit. U can pinch the sugar with both fingers and when u see two lines that means the sugar is ready

      no dear, you can't resign being, the sticky syrup of the sugar is what makes the chunda tastes good, which won't happen with jaggery, 2nd that your chunda won't last long, if you want to make it immediately and eat it right away you can try, but the taste will be totally different.

      it usually takes about a week for the chunk to be ready so the do check the sugar the same day or the very next day you start making the chunda, if you add it once the chunda is ready then there is a big possibitly that your chunda will go bad.

      +Rajni Gupta looks like you kept it in sun for longer time than necessary. Now boil some water and once it cools add about 1/4 cup of water to 1 kg mango and mix it in then if you feel there is lot of water just microwave it for 20-30 seconds. Do let me know how it's turned out 👍

    Ooh wow this recipe looks so nice! But I live in London and I don't have a balcony, I think the pickle would get mouldy! Does it become slightly sour with fermentation? I might try this in the summer when it's not raining

      +Paola Energya thank you 😊 and yes you definitely need to wait for the summer time to make chunda. I usually wait all year long for the summer as it requires a lot of natural heat. So it might be a good idea to wait till the heat is at it's peak to make this delicious chunda 😊

    U need to dry the mango pulp after adding salt and termuric..otherwise the water content in mangoes will get fungus after few days..

      +Damayanti Bhoite if you don't have enough heat then you can try it in the microwave.make sure to stir it after every two minutes. It should be done in small quantities and cook for 6-10 minutes depending on the raw mangoes

      The chunda takes about a week to get ready so add the sugar on the 1st and taste if even if u add on the 2nd day it's ok, but if u add later than that there is a possibility that ur chunda will go bad. If u follow the exact measurements as per the video u will be ok. U can also check my website for more details the link is in the description box underneath the video

      +Abhishek saxena you can use any big juicy green sweet and sour raw mangoes. If you cut it and feel they are sweet then add less sugar. Also the best time to make pickles is when it's summer time and no clouds.

      +Lalitha Shah try making it in the microwave just heat it for 3-4 minutes but make sure you do it intervals. So put in the microwave for a minute then take it out mix and again in the microwave for a minute. Do let me know how it turns out

    As u said I had followed the instructions . Mine is little more sour taste . And I could see white fungus formation on its top . What to do . Texture were so gud . Only these two faults . How to rectify it

      1) The reason your chunda might be sour is that the mango you used is not the mango that is usually used to make chunda. can you pls tell me the name of the mango you used ? was it a pickle mango.
      2) What is the weather like where you are at? that plays a very big role. it needs to be hot and not cloudy at all. also the reason you got fungus could be that it didn't get enough sunlight so the sugar syrup is still at a incomplete stage.
      what i would recommend is that you remove the fungus with a clean dry spoon, and then microwave the chunda 20 seconds intervals for 1-2 minutes. do let me know if this works out .
