Ingredients
1kg grated raw mangoes
750 grams sugar
1 tbsp red chili powder
1 tsp turmeric
2 tbsp cumin seeds
1/4 tsp asafoetida
1 tsp salt
Method of preparation:
In a bowl of raw, grated mangoes, add sugar and mix them well.
Once the mango starts releasing its juices add salt, turmeric, asafoetida, red chili powder, and cumin seeds. Give them all a mix.
Transfer the mixture to a wok and keep stirring it.
After sometime lower the flame and check the consistency of the sugar.
Once you get the desired consistency, switch off the flame and store it in a bottle.

Hi chef Varun, you haven't taken equal quantities of sugar. The weight of the mangoes is 1kg but you have added 750 grams of sugar
After taking off peel and seed it weigh aroud that weight
You should put masala after cooking
What can be missing in this I don't know correct improve is the way to learn and create recipes exactly...

add red chili powder after prepare of a chunda. otherwise burnt flavour of a red chili powder will develop.

Varun, I love my mother's chhunda more than anyone else's, one of the reasons for this being that her chhunda is remarkable in taste. But I'm willing to give your recipe a try and see how close your recipe comes to hers, though the amount of cumin seeds you've mentioned is way over what my mother's recipe recommends. Will let you know the result. Thanks for sharing this, as it'll be useful to me in this time of Lockdown when I can't go to the building terrace to keep the chhunda in the hot Sun.
