- Eating Mangoes can become an addiction esp if they are made into a chutney. Chunda is a Gujarati mango pickle. The classic mango chunda is classified as a pickle and not a chutney as grated raw mangoes are not cooked but kept in the sun to mature.
Over the years we have started to cook raw mangoes for instant gratification so here is my Instant Mango chutney or call Instant Gujarati Chunda.

Ingredients:
Raw Mango (grated) - 350gms or 2cups
Sugar - 350gms Or 1¾ Cups
Salt - to taste
Black Salt - ½ tsp
Chilli powder - ½tsp
Roasted Cumin - 2tsp
Water - ¾ cup

Mango chutney. Actual chutney. Cook raw mangoes in pressure cooker. Take out the pulp. Add salt, sugar, red chilli powder, and plain jeera powder and cook in a pan until it becomes a little thick. It is a great accompaniment with parathas, thalpeeth, theplaas, chapaatis, etc.
Bengali kacche aam ki chutney,Aam ka murrabba,Tikha mitha aam ka achar.
Instead of adding sugar in the beginning add it later. Mix all ingredients except sugar. Salt is enough for raw mango to cook. Then you can add sugar and cook. This will eliminate the need to add water. Just shared my experience.
I also think sugar added at later stage as it make hard easily..can you mention your method of chutney
@@r.studio6170 Chutney and Chhunda are two different things. For chutney I cook raw mangoes in pressure cooker. Then separate the pulp and skin. Add salt, red chilli powder, jeera powder and sugar to the pulp and cook till thick. This can be stored in the refrigerator for almost a year. Tastes yummy.

In a Typ Gujarati chhunda, jeera tadka is after mango cooks to 1 thread chasni and mirchi is added after it cools down for a red color.
We call this pickle as aam kuccha Ka achar in Jharkhand @kunal kapur
