I am a service dog handler. You can tell a dog enjoying the work by the way they act. My boy is made If i leave without him Roxy quivering in anticipation sight to see.

With the fields we often look at the quantity of fodder on the field rather than quality. What would be interesting would be whether the extra clover improves performance or not although difference in height above sea level will make that difficult. It’s getting the balance right for the field and the system. Suspect the clover rich would do well set stocked but possibly not cropped.
It would be interesting how you feel they are performing and your preference.

If you want to keep the clover in field B don’t over graze the field in winter. Field B best higher protein diet and nitrogen fixing and if you let it flower good for pollinators.
