Chinese Steamed Buns Stuffed with Teriyaki Chicken

I wanted to try some Chinese steamed buns stuffed with teriyaki chicken.
It turns out very well. The Japanese teriyaki sauce goes very well with the soft skin of theses buns.

👩‍🍳Ingredients for 14 buns
Dough :
500g wheat flour (all purpose)
5g baking powder
5g yeast
22cl lukewarm water
30g sugar
Marinade:
3 chicken thighs
2 garlic cloves
1 tsp grated ginger
½ tsp salt
½ tsp ground pepper
1 tsp cornstarch
1 tbsp sesame oil
Teriyaki sauce:
2 tbsp sugar
4cl cooking sake
4cl mirin
4cl light soy sauce
2 tsp dark soy sauce
100g bamboo
30g green onion
1 tbsp vegetable oil
1 tsp cornstarch
