      Hey! How much pickling spice do you use? It looks like a tbsp in the video, but the blog post only shows the celery seed, mustard seed, dry mustard and cloves for spices.

    Here I am, smack dab in the middle of zucchini season!...So I made a batch of this using a combination of champagne vinegar and rice vinegar. Miss 11 got up this morning and popped a heaped spoon of this into a portabello mushroom, added some cooked ground beef and super finely diced pepperoni, topped with cheese and she had herself portabello mushroom pizza for breakfast....YUM!

It's a question I always had before I'd consider canning something (or more of it) so I started to share a few of the ways I've folded my home canned goods into my meals.     This is so right on time!! I stepped outside of my comfort zone and purchased a fairly large amount of zucchini from the farmers market. I was just going to make zucchini bread and roast some for meals, but God knew I needed to do something new!! I will be trying out this recipe this week.       @FavorKreations you probably cooked all your zucchinis by now BUT you can also make faux apple pie with zucchini!! Just peel it, dice it and cook it on the stove like you would apple with cinnamon and the like. Then pour it into a pie crust and bake it up! 😊

    I made this recipe for the first time this year. I finished with 15 jars. I've always wanted to make zucchini relish and was very excited to complete this goal. It is delicious!     Have you ever mixed it up and used yellow squash with the zucchini? I think next time I’ll try a mix. All the recipes look amazing as usual Cassandra!

    To be sure your homemade vinegar is 5%, you can use a hydrometer to test it. Wine makers use it to determine the wine strength.

    My zucchini was a flop this summer. The vine borers got them. Trying again this fall and so far I’ve pulled out 3 vine borers. Man not giving me a break at all. Peppers are going great though! I’ve got red ones and by surprise I’ve got yellows to. Saving them all by chopping them up and freezing. May have to make this if my zucchini will work out this fall.

      Hi Amy! Shucks, I’m so sad to hear about your zucchini. You’ve put time, money and effort in you garden but some seasons the pest pressure takes over. If you can still find your zucchini on sale at a grocer of farmers market (and freeze it like your peppers) this is a delicious recipe to make! So good to see you!

      Nancy, this recipe is so, so, soooo good. Honey that chicken sandwich is out of this world with this spread! Yes, its a bit tedious cutting up the zucchini, but I just can't do regular relish anymore! Hope you get a chance to try it!

    Question for you Cassandra. Towards the end you said that approved canning recipes limit jar size to 1/2 pint or pint jars but I notice you are using what looks like the 4 oz jars for this recipe...is there a different processing time for those? I'm new to canning and have the small batch book on order so I can't look at the recipe yet.

    I have a hard time finding 4oz jars which I use a lot of for condiments. Fortunately, I can go to the commissary at Nellis AFB & find a case or 2 on the shelf when I go. They are the perfect sizes for condiments.

      Hi Nancy!! Lovely to see you again! I 100% agree with you on 4 ounce jars being hard to find. After years of canning I’m now just moving some some my inventory into this smaller size, which my family has gifted most of my inventory. I can usually find them during the holiday time. Most of my relishes are in pint sized jars. Go AirForce! (As you know I grew up with an airforce dad and married a Navy guy) commissary all the way!

      Hi Pip! Welcome to the addictive and delicious world of canning! While not having celery seed won’t compromise the safety of this recipe (that’s the vinegars pet in terms of achieving the right amount of acidity) celery seed totally is a noticeable taste addition I enjoy with this recipe. Does that make sense?
