Personally I love fresh tomato in my grilled cheese, like a yellow cheddar shredded and slice yellow American.. that simple, if have jar onion jam(just 10+lbs onions caramelized to jam just salt) I put on, but happy just a nice tomato, I use kewpie Japanese mayo. And butter. But late night whatever I grab lol
making grilled cheese is yum I always enjoyed my families for breakfast is a grilled frenchie toastie cheesie toast the bread butter in pan not to brown at first place cheese in the center leaving just a smig of inside a little center of shredded cheese then once outside toast with butter a bit then set it aside to rest a bit while you scramble some eggs then put favorite flavorings salt pepper etc... then you dip the grilled cheese dip it inside the eggs before you put it into pan of butter with some more shredded cheese sprinkled into butter let it met slightly then put your grilled cheese in to pan and cook to perfection can either sprinkle powderd sugar or maple suryup

My mother taught me this method. Get 2 consecutive slices of bread, and butter the inside of the slices. Put on the griddle or frying pan, buttered side down. Butter the upper sides, flip one over when done. Add the cheese to the done side, and put the other side right on top. Cook until both sides look good, and the cheese has melted. This may be the only reason I'd use "American cheese." steve
I use deli sliced American Cheese made by Cabot. Yes, it's REAL cheese. Not the junk made by Kraft wrapped in plastic! Low and slow on the temperature, 3 slices of cheese, and sometimes I like to use Brioche. I never fail!

If I get a slice of gouda in there, all the better. No soups to accompany it. Just the grilled cheese itself.

I use butter on the outside, mayo on the inside and Borden cheese. The cheese does not run like Kraft.
