To reduce or eliminate gas from eating beans, I always add about a tablespoon of powdered Ginger or diced ginger root to two cups of dry beans while cooking. I'm Mexican and we just put salt in them while they cook, cause we make several bean dishes from one pot. Enfrijoladas, bean soup, refried beans, bean tostadas, etc
a lot of Mexican dishes are very easily made vegan so id recommend those. But not the Americanized versions like casseroles and baked enchiladas those are quite a bit harder to make vegan. I've never baked anything except pastries and most often if baked it is not authentic.
Mexicans are experts on not messing up beans so they don’t need to go through the extra steps to avoid it lol. I tried soaking the beans once and my dad said “que chingado es eso?” lol

I am 78, and have been eating these beans daily…I put them in a Jasmine rice/chicken/tomatoes dish…I’ve hsd no digestive problems.. whuch I expected. I plan tomfraszevthe remaining beans, for use latter. Tomorrow I’m doing Great Northern White beans.. I live alone (with two small dogs), so mist of Thst willmget frozen. I have found thst besn dishes are great on my budget,.. IP cooking is new to me.. I bought a little three quart one, that is perfect for me… I have to admit Thst it intimidated me at first, but now imam comfortable with it… I plan to make lots of soup this Fall, andcWintet..
My Mexican mother-in-law cooked her beans in a clay pot over an open wood flame. She added only salt and never soaked them. I've been adding herbs and spices to my beans since I can't remember when. I choose to always use fresh ingredients rather than dried whenever possible. Thyme is a favourite as are various varieties of chilies. Black beans are the family favourite, and as we're not vegan or even vegetarian, a smoked pork hock often goes into the pot. Thanks for a fine video. I'll be subscribing.
I used some of this recipe but also added 1 tsp sugar to whole pot of beans, 1 tsp bacon drippings, 1 tsp adobo, 1 tsp Sazon, I did use carrots, celery, onion and garlic, pepper, 1 tsp salt, 1/4 cayenne pepper, 1/4 tsp cumin, 1 bay leaf Sooo good. Thank you for your recipe 💕

I'm glad to see you emphasizing not adding salt to the raw beans because it makes them tough. I think a lot of people don't know that. Way back in the 60s I read that if you keep the beans damp for a few days and let them begin to sprout it increases the vitamin content immensely. I used to do that and I thought it made the beans more tender. Don't let them sprout too much because they look like maggots in the beans.

I live in South Carolina and I love to make little bowls of collards, black-eyed peas, onions and garlic of course, Cajun seasoning, and top it off with what we call pepper vinegar. Sometimes I add tomatoes (cooked or raw) and cooked okra. We also have hot picked okra which is a good topping. VERY southern dish. Served with a vegan cornbread.
Of course soak beans overnight and rinse; my sis gave me an instant pot last year and I find the beans come out way softer using this method. My Dad's dish was Serbian pasoulj, which just means bean soup; he used a lamb shank or ham hock and serious amounts of smoked paprika, garlic, herbs, hot pepper, bell pepper etc.; I loved this dish, and as a vegan fiddled with it so that flavour was authentic without the meat. What I like about using the instant pot is that although creamy canalinni (sp) beans are optimal, chickpeas in a pinch are soft enough to use. Great, helpful video. If anyone is interested in the kind of bean soup I mentioned, I will try and post it where it is most available; the videos I watched were not in English. Cheers all!

When I am done with the final cooking of my beans, I take one (1) cup full of my cooked beans and murder (puree) them with my stick blender and then add them back into the pot. Also, I add in a little nicely aged Balsamic Vinegar and a finely diced Jalapeno pepper and a small teaspoon of powdered mustard into my Southwest Black Bean Soup. Your recipe is perfect, I am only telling you what I do. Stay Safe, - Best Wishes Always.
brilliant idea. I found a recipe for mulligatawny soup, not vegan; masala, bay leaves, thyme and tomato puree with mirepoix, kidney beans and brown rice 2/1; water to cover; after vegs were ready was about 1/2 hr on stove; the trick was to remove the chicken and use immersion blender. Would disappear overnight; really good. Make same thing now without meat; still gets gobbled up. I brighten up soups with lemon juice, also powdered mustard, but I really like the Balsamic Vinegar/Jalapeno pepper idea. Tx!!!!!!
Nice informative video. I am a bean lover off all kinds of beans. They last on the shelf forever and can always be used anytime. They are inexpensive, and great for food storage. The recipes for beans and what to do with them are endless. I am not a Vegan, just a bean lover.

Stopped by my local Indian grocery for fresh turmeric and decided to try something new, so I also grabbed a package of yellow mung dal, which are split yellow mung beans,. The mung dal turned out to be a whole foods version of orzo pasta. LOVE the stuff and was so happy to find it - really missed rice pilaf but don't eat pasta anymore because of the empty carbs. Mung dal is the perfect stand in to replace the orzo pasta in pilaf and you can even toast it as you would orzo pasta. If you pre soak you can toss mung dal in a pot with some fresh ginger, fresh turmeric, and other Indian spices and loads of veggies in tomato-based broths (can of tomatoes or a tablespoon or two of tomato paste does the trick) and just bring it all to a boil and you're done.

Ayla Beverly I just substitute the beans for cashews in Hot for Food's cashew cream: 1 c. white beans, 1/2 cup plant milk, 2 TBSP lemon juice, 1/2 tsp apple cider vinegar, 1/4 tsp each salt, pepper, onion powder & garlic powder. Blend it all up & voila!
Have you had black lentils? My favorite bean to make in my InstantPot! When I'm in a rush I add the soaked lentils with garlic powder, onion powder, smoked paprika, salt, cumin and that's it! I like to slow cook vs high pressure!
Do you know you can do “bean paste” kinda like hummus? that’s how we eat beans in Guatemala (we also eat the the way you do). Anyways, you blend your beans then you put them in a pan and move them regularly so they don’t stick, let them cook until the desire consistency is achieved and voilà! You can eat them with tortillas or bread (heaven) you can eat them with nachos, bananas, plantains, etc. They’re super ricos!
@@hlyons3360 I lived in the north east of Mexico and we too used mostly black beans. A close friend was from Oaxaca, and they generally preferred pinto. I would suggest the type of bean eaten is often regional preference.

Thanks for the tips! I soak garbanzos weekly and forget to toss the soaking liquid and occasionally get stomachs pains after eating probably due to forgetting. And like the idea of tossing in vegetable scraps to season the beans. I will do this and can’t wait to taste the results. And you are so right about seasoning the beans. I love using 5 squares of dried kelp per 6-7 cups of dry beans that were sprouted. I have over done it with kelp before, and 5 squares is probably too much, but I like it that way and the absence of bean gas is great too. I eat about a can worth of beans per day, so 7 cups of dried beans last maybe 10-12 days. Also I like to keep my legumes basic. That way I can vary things up. So I don't even use garlic for chickpeas, due to also making cookies from them.
Man, when I lived in Hawaii we had a mango tree in the backyard and an avocado in the front. I did not fully appreciate it! I'd kill for an avocado tree that size now.

If you add a pinch of baking soda to the soaking liquid, the cell walls of the beans will break down much easier and not only will they be more tender, they will be easier to digest, thereby producing less gas.
We always said: beans beans they're good for your heart The more you eat em, the more you fart.. The more you fart the better you feel, so eat your beans with every meal 😂
Thank you so much for finally getting me to use my Instant Pot! This turned out great despite the fact I may have let the water/steam out too much? It was steaming (and making my apartment smell amazing) the whole time. There was not much water left over when they were done. I was worried when researching cooking times for black beans in the Instant Pot (once I already started it). A lot of other people online recommend more or less time than the 15 minutes for black beans, but they were perfectly firm, yet thoroughly cooked with the 15 minutes (and waiting 20 minutes after for the pressure to release/temp to decrease). Also I was worried I used too many spices as I only cooked 1 pound of beans, but they were not too strong.
This is great! I recently discovered my rice cooker can do this! I did use some vegetable broth (1cup) with my water but didn't add fresh veggies or as many spices. Going to try your spices Lily! Thanks!

I am not a Vegan and I love beans. I got my love of them from my In laws Granny who is from Kentucky. In the south Beans are a staple. I never had any beans other than kidney beans (sometimes refried at the Mexican places which I loved). Then in my 30's I started to make my own beans and that is where my love started. Now I can make all kinds of recipes and I just wonder where have beans been all of my life?
Moving towards a more plant based diet and exercising; but fat on waist and belly is not budging. I've been relaxing more to reduce that cortisol; is there anything else I can do? Any advice? Thanks!

You’ll get much more flavor if you place the pressure cooker on sauté and add veggies and spices. After about 10 minutes add the beans and liquid. Now set it on pressure and cook the beans.

Yes, I freeze 3/4 of those beans! The last in the freezer indefinitely, though we usually eat them within a few weeks. They will last in the fridge at least 3-4 days, after which they start to get a bit... interesting... Fortunately, we usually eat them all in 2 days.
You may not be checking comments on this video now but wondering how long a pot of beans that large will last you and Liwai and the girls, and how do you store them once cooked/how long do they keep in the fridge? 🙏❤️
I usually freeze half the pot and we eat the other half over 2-3 days. I put the frozen beans in containers that are big enough to serve us for 1-2 meals depending on how many mouths there are to feed!

Soaked great northern beans, a few stalks of celery roughly chopped and two yellow onions cut in half and a few cloves of garlic, add sage, thyme, rosemary, black pepper and veggie broth. Thanksgiving beans. 😊

Gas issues? Add a sprig of Epazote, a Mexican weed that truly gets rid of the gas. Well worth looking for in the spice section of your Mexican market. If you find a few seeds in the package, all the better. Plant them! It grows BIG, by the way. Cut leaves off, dry and save for winter time. Make sure you save the seeds for next year!
good stuff lady. there's also the old school combo of pressure cooker pot and putting it on the hob. everyone just needs to find the way that works best for them and they will eat like kings or queens.

12-24 hours or however long I remember... I don't use a ratio, I just soak them with a ton of water, add more if they become exposed at some point, dump out the water, then cook with the beans JUST covered.
Cate Rose, Eight hours is plenty providing it's not too cold in the house. With 6-8 hour soaked beans you can go on to sprout them and have fantastic results. Soaked too long and you will be smelling rotting beans when trying to sprout them. I don't like the idea of cooking beans that are ready to rot. As a note, old beans don't sprout well. So buy your beans from stores that move a lot of beans and don't have old beans to begin with if you want beans that soak and sprout better.
Would you mind sharing where on the BI you can source large quantities of dry beans? We've been PB since January and all I've found are the little one pound bags at the grocery store.

My dear old grandmother would always add a tablespoon of baking soda to the soak water, it helped to reduce the gas, it does work.
I've been considering an instant pot for some time now and I'm sure this video has solidified my purchase!

What I like about using the instant pot is that although creamy canalinni (sp) beans are optimal, chickpeas in a pinch are soft enough to use. Great, helpful video. Thank you for the video! I enjoyed your presentation and think you did a really great job. Somewhere you asked for suggestions and this is what I do. When I am done with the final cooking of my beans, I take one (1) cup full of my cooked beans and murder (puree) them with my stick blender and then add them back into the pot. Also, I add in a little nicely aged Balsamic Vinegar and a finely diced Jalapeno pepper and a small teaspoon of powdered mustard into my Southwest Black Bean Soup. Your recipe is perfect, I am only telling you what I do. Stay Safe, - Best Wishes Always.

brilliant idea. I found a recipe for mulligatawny soup, not vegan; masala, bay leaves, thyme and tomato puree with mirepoix, kidney beans and brown rice 2/1; water to cover; after vegs were ready was about 1/2 hr on stove; the trick was to remove the chicken and use immersion blender. Would disappear overnight; really good. Make same thing now without meat; still gets gobbled up. I brighten up soups with lemon juice, also powdered mustard, but I really like the Balsamic Vinegar/Jalapeno pepper idea. Tx!!!!!!
I add white vinegar to beans and it adds a great depth to the taste but ive not tried using balsamic (which i love) so will definitely give a try!
Nice informative video. I am a bean lover off all kinds of beans. They last on the shelf forever and can always be used anytime. They are inexpensive, and great for food storage. The recipes for beans and what to do with them are endless. I am not a Vegan, just a bean lover.

Stopped by my local Indian grocery for fresh turmeric and decided to try something new, so I also grabbed a package of yellow mung dal, which are split yellow mung beans,. The mung dal turned out to be a whole foods version of orzo pasta. LOVE the stuff and was so happy to find it - really missed rice pilaf but don't eat pasta anymore because of the empty carbs. Mung dal is the perfect stand in to replace the orzo pasta in pilaf and you can even toast it as you would orzo pasta.
If you pre soak you can toss mung dal in a pot with some fresh ginger, fresh turmeric, and other Indian spices and loads of veggies in tomato-based broths (can of tomatoes or a tablespoon or two of tomato paste does the trick) and just bring it all to a boil and you're done.
after soaking my beans i put them in the crock pot overnight. so easy!

Ayla Beverly I just substitute the beans for cashews in Hot for Food's cashew cream: 1 c. white beans, 1/2 cup plant milk, 2 TBSP lemon juice, 1/2 tsp apple cider vinegar, 1/4 tsp each salt, pepper, onion powder & garlic powder. Blend it all up & voila!
Have you had black lentils? My favorite bean to make in my InstantPot! When I'm in a rush I add the soaked lentils with garlic powder, onion powder, smoked paprika, salt, cumin and that's it! I like to slow cook vs high pressure!

You can cook littles quickly without a pressure cooker on the stove. Mix lentils otherwise you can develop allergies after many years.
Do you know you can do “bean paste” kinda like hummus? that’s how we eat beans in Guatemala (we also eat the the way you do). Anyways, you blend your beans then you put them in a pan and move them regularly so they don’t stick, let them cook until the desire consistency is achieved and voilà! You can eat them with tortillas or bread (heaven) you can eat them with nachos, bananas, plantains, etc. They’re super ricos!

And they are black beans throughout Central and South Americas. Must be a Spanish influence. Most Mexican restaurant cuisine uses pinto.

@@hlyons3360 I lived in the north east of Mexico and we too used mostly black beans. A close friend was from Oaxaca, and they generally preferred pinto. I would suggest the type of bean eaten is often regional preference.

Thanks for the tips! I soak garbanzos weekly and forget to toss the soaking liquid and occasionally get stomachs pains after eating probably due to forgetting. And like the idea of tossing in vegetable scraps to season the beans. I will do this and can’t wait to taste the results. And you are so right about seasoning the beans. I love using 5 squares of dried kelp per 6-7 cups of dry beans that were sprouted. I have over done it with kelp before, and 5 squares is probably too much, but I like it that way and the absence of bean gas is great too. I eat about a can worth of beans per day, so 7 cups of dried beans last maybe 10-12 days.
Also I like to keep my legumes basic. That way I can vary things up. So I don't even use garlic for chickpeas, due to also making cookies from them.

If you add a pinch of baking soda to the soaking liquid, the cell walls of the beans will break down much easier and not only will they be more tender, they will be easier to digest, thereby producing less gas.

Thank you so much for finally getting me to use my Instant Pot! This turned out great despite the fact I may have let the water/steam out too much? It was steaming (and making my apartment smell amazing) the whole time. There was not much water left over when they were done.
I was worried when researching cooking times for black beans in the Instant Pot (once I already started it). A lot of other people online recommend more or less time than the 15 minutes for black beans, but they were perfectly firm, yet thoroughly cooked with the 15 minutes (and waiting 20 minutes after for the pressure to release/temp to decrease). Also I was worried I used too many spices as I only cooked 1 pound of beans, but they were not too strong.
This is great! I recently discovered my rice cooker can do this! I did use some vegetable broth (1cup) with my water but didn't add fresh veggies or as many spices. Going to try your spices Lily! Thanks!

I am not a Vegan and I love beans. I got my love of them from my In laws Granny who is from Kentucky. In the south Beans are a staple. I never had any beans other than kidney beans (sometimes refried at the Mexican places which I loved). Then in my 30's I started to make my own beans and that is where my love started. Now I can make all kinds of recipes and I just wonder where have beans been all of my life?
my mom used to wonder why I got so excited in the vegetable aisle; her fault, she was a great cook.

PATIENCE. It can be very hard to objectively tell how much weight is being lost from where. Also, if you're like me, you lose the stomach weight LAST. I know, bummer, but it's your body's choice. I use a little electric coffee grinder... works great!
You’ll get much more flavor if you place the pressure cooker on sauté and add veggies and spices. After about 10 minutes add the beans and liquid. Now set it on pressure and cook the beans.

I love your cooking videos. You keep it easy and practical while giving nutrition tips on the food you are cooking. Q. Are you freezing the leftovers? Or how long do they last in the fridge?
Yes, I freeze 3/4 of those beans! The last in the freezer indefinitely, though we usually eat them within a few weeks. They will last in the fridge at least 3-4 days, after which they start to get a bit... interesting... Fortunately, we usually eat them all in 2 days.

I usually freeze half the pot and we eat the other half over 2-3 days. I put the frozen beans in containers that are big enough to serve us for 1-2 meals depending on how many mouths there are to feed!

Soaked great northern beans, a few stalks of celery roughly chopped and two yellow onions cut in half and a few cloves of garlic, add sage, thyme, rosemary, black pepper and veggie broth. Thanksgiving beans. 😊

Just a couple quick questions. It looks like you did some nice toppings to your beans after the Instant Pot was done with its job. Also, I'm wondering if you have any ideas about dishes like New Orleans red beans and rice, or Jambalaya. Thanks again for a great video.
Gas issues? Add a sprig of Epazote, a Mexican weed that truly gets rid of the gas. Well worth looking for in the spice section of your Mexican market. If you find a few seeds in the package, all the better. Plant them! It grows BIG, by the way. Cut leaves off, dry and save for winter time. Make sure you save the seeds for next year!

You definitely don't HAVE to, but they are a wonderfully food for health!
How long do you soak the beans for? And what water to bean ratio?
12-24 hours or however long I remember... I don't use a ratio, I just soak them with a ton of water, add more if they become exposed at some point, dump out the water, then cook with the beans JUST covered.
Cate Rose, Eight hours is plenty providing it's not too cold in the house. With 6-8 hour soaked beans you can go on to sprout them and have fantastic results. Soaked too long and you will be smelling rotting beans when trying to sprout them. I don't like the idea of cooking beans that are ready to rot.
As a note, old beans don't sprout well. So buy your beans from stores that move a lot of beans and don't have old beans to begin with if you want beans that soak and sprout better.

I make a homemade herbamare, no salt version. Great in soups of all kinds. Thyme, parsley works well with you seasonings.
