  • In Thailand, by the roadside, we can often smell delicious flavors from a street vendor's stall.
    We can enjoy a bowl of rice noodle clear pork soup with meatballs, ground pork, fried garlic, herbs.

    Ingredients for 4 people
    500g thin rice noodles (1mm)
    200g pork loin
    2 pork belly slices
    200g fish balls
    40g garlic cloves
    1 tbsp vegetable oil
    2 × ¼ tsp salt
    Ground pepper
    150g bean sprouts
    2 green onion
    10g cilantro
    A few pinches of Tianjin preserved cabbage (optional)
    Broth:
    1kg pork bones
    3L water
    1 tbsp + 1 tsp salt
    2 tbsp fish sauce
    7g coriander seeds
    7g peppercorns
    1 onion
    1 head of garlic
    2 heads of pickled garlic
    5cl pickled garlic juice
    80g black or white radish
    15g rock or white sugar

    Near my university there is a Thai restaurant, this soup was my favorite from there. Sadly due to COVID I can’t go back to university. Thank you for sharing this recipe, so I can make the soup myself.

    this is teochew noodle i believe

      Yes, it is a Teochew noodle dish known as guǒtiáo and can be found in many different countries in SEA where Teochew people migrated and settled in. The recipe for this dish does vary and adapted to local taste. Some countries also do a dry version where a bowl of soup is served on the side, preferred during hot weather.
